regarding sinigang, the one u tried is Sinigang Na Hipon (shrimp) but commonly its pork (baboy). the authenticity really comes from the acid ingredient and the most common is tamarind (sampaloc).

Sinigang with shrimp/prawn or seafood usually tastes milder. If you want that rich flavor of sourness you were looking for, you go for the Sinigang with pork.
Hi Sylvia, they're partly right on lechon kawali being kinda like bossam! Lechon kawali is boiled for at least 30mins (with garlic, peppers, salt, and onions) before it is fried! Poke the skin after boiling, then rub a bit of salt on the skin before frying! Actually we usually boil it at night, then fry it in the morning so that all the water from the boiling dries out first. If you don't, the hot oil will react hazardously when the water droplets from the freshly boiled pork reaches it. When I have no choice I put it inside the electric roaster first for a few minutes so that the water dries out before frying. We use tamarind and tomatoes to make the sour broth for the sinigang! We add it after letting the pork (or beef) boil for a couple of hours (with peppers and onions). Less if using a pressure cooker. You can also choose to not add the tamarind and tomatoes and it just plainly becomes nilaga (literally meaning boiled in english), just add cabbages, a couple of sweetcorns, some leeks, and voila- you have the Filipino version of galbitang! Beef is tastier!
Authentic Sinigang soup's sour taste is from tamarind not lemon. I like Sinigang because it has variety of veggies - gabi (taro, it makes the soup think), kangkong (water crest), okra (lady finger), talong (eggplant), sitaw (string beans), labanos (raddish). Try also the crispy pata. =) Thank you for introducing Filipino food to your friends.
