Iberico is a very nice breed of Land-Pigs from the Great Nation of Spain. There are a few dietary distinctions to the pigs, and each distinction is given a name(At least when it comes to Iberico Hams). "Iberico de bellota" is said to be the highest level, where the Iberico pigs feast on Acorns in the Great Nation of Spain's lands for their entire lives, and then the pigs are aged for 2 or so years and then their legs are sold as prized cuts meat for charcuterie. The other distinctions are defined by the amount of time the Land-Pigs feast on Acorns, as well as how long the meat is aged for the legs(so if you're not getting the aged product the labels are most likely different). However, This Tuna Emperor would not say that this Breed would match up in terms of "FAT content" when compared with KOBE, so is the "KOBE Beef of Pigs" meant to mean the "best pigs?"(This Emperor has heard many say KOBE isn't the best beef, and some dislike it due to the large amounts of fat). Iberico is definitely a top choice, but there is also the prized "Swabian Hall" pigs as well as the great "Mangalitza" Pigs. If we are talking about "FAT Content" Magalitza are the top choice usually, but there are a couple of breeds that are also top fat contenders, which I heard the "Swabian hall" is also, but This Tuna Emperor doesn't recall much of that information as it has been a while. Provided we are able to travel to Spain next year I'm so looking forward to visiting some pig farms there. I've been researching these pigs for a couple of years now. Guga had it partially correct about the acorns. The farmers allow the hogs to free range through the Oak forests to feed heavily on the acorns on the forest floor. The breeding program plus the acorns and other things found in the forest create what many consider the best pork in the world. Also some of the most expensive. Their cured ham is considered absolutely amazing. So here's to the guys doing this video and hopefully next summer I will get to see and taste this first hand instead of drooling looking at this screen. Hmmm , Iberico pork. 😋🐗
