Great cook Drew, that looks like an awesome cut of pork! Can't wait until we relocate to the lower 48 and have better access to cuts like that. Just not economical to have unusual stuff like that shipped up here( Alaska ).
I need to try this. Looks like a pork version of a beef skirt steak but with even more marbling! Hot snd fast is definitely the way to go so u get that seat before overcooking the middle! Love it!

I'm thinking about buying a yakitori from mill scale, and it would be cool to see if it's versatile enough to do mop sauce direct heat cooks. Thanks!
I think they’d have to be more grilled ribs on the yakitori since there’s no radiant heat (no lid). Definitely worth giving it a shot though! I appreciate the idea and thanks for watching
Drew, I'm stumped. I want a smoker box like the chud box. But I also want the Mill Scale Yakitori. Is there a difference? Their both, I guess, open flame. I'm just trying to save money.
They’re very different cookers. The Yakitori doesn’t have a lid and is an awesome grill. The Chudbox is a direct heat cooker and super versatile. Both are great, just depends on if you want something focused on grilling or bbq
