- Legit "Low n Slow" Smoked Beef Back Ribs on an Argentine Grill! I was able to pull this off with the help of Sunterra Pro's www.sunterra.pro/ new "Versa-Lid." This new accessory allows the Argentine Grills and Santa Maria grill to do traditional low n slow smoking cooks. Crank up the heat and you have a pizza oven! Hence the name, "Versa-Lid." BBQ Sauce Recipe:
1 1/2 cup beef broth
1 tsp pickling spice
1 tbs beef tallow
1/2 cup hoisin sauce
1 tbs fresh grated ginger
1 tsp soy sauce
A couple pinches crushed red pepper
Bring to a bowl, reduce to simmer for about 40 minutes.
Pickling Spice Recipe:
2 tablespoons whole mustard seeds
1 tablespoon whole allspice berries
2 teaspoons whole coriander seeds
1 teaspoon red pepper flakes, or more to taste
1 teaspoon ground ginger
2 bay leaves, crumbled
2 cinnamon sticks, broken in half
6 whole cloves

Hey Greg, I got a helpful hint on the probe issue.....try using a potato to stick the probe into. If you slice off one side so it sits flat, you can push the probe all the way through and it won't wiggle or fall down on the grate.
Those turned out gorgeous. Versa lid was a genius idea!

Those looked great, Greg! I bet that set-up would do pizzas, too. Just a thought, make a really good ribeye, and leave it just a touch under-done. Make it the star of a pizza; along with maybe some red onion (or sweet onion), bell pepper, mushrooms if you like them. I've found that putting the bulk of the toppings under the top layer of cheese, and then putting some half-cooked bacon on top works well. The bacon finishes cooking and the rendered grease helps melt the cheese. I've never had a smoky pizza, either. It seems like it would be killer.
When I get my grill built I am SO trying pizza in my rig!
