The baking soda/ water mix gives them the traditional “pretzel” flavor and color/texture. 🤗 the longer you leave them in the water mixture the darker in color they become as well harder in texture.. but still soft on the inside. this is also how they make bagels. 😊 I love your cooking videos. If you have fast acting yeast you don't need to do the whole "activating" thing. That's the point of fast acting yeast. It activates fast, within the dough. If you leave it to sit it's going to be releasing bubbles into the air that it should be releasing in the dough

Stephen Vinarub he doesn’t need to add sugar since dry active yeast doesn’t need anything to eat but the sugar does help indicate the activeness of his yeast. It’s likely that the water may have been a little too warm and “killed” it
Having managed a pretzel store that made from scratch soft pretzels, let me give you a few tips. The water and baking soda mix that you dip the pretzels in is what makes them brown, so you do not need to let them sit in the solution, nor do they need to boil, as long as the baking soda is dissolved in the water, that's all that's needed. Second, when you mixed the dough, please use a dough hook and let it mix the dough and knead it for about 5-10 minutes. It should very much be like bread dough consistancy, then let the dough rest in a covered and greased bowl for at least 30 to 60 minutes. Third, please don't add the butter and salt to the pretzel bites until AFTER they are baked. Then brush on the butter or better yet, we would dunk them in a large pan of melted butter, then sprinkle the pretzel salt on top of them, putting the butter and salt before baking them prevented the pretzel bites from properly browning that darker pretzel color. Hope you revisit and try these suggestions. Love watching you and your GF's videos. You make a great team.

The baking soda is to encourage the Maillard reaction to occur which is what gives the pretzels their "pretzelly" taste and texture

If you have fast acting yeast you don't need to do the whole "activating" thing. That's the point of fast acting yeast. It activates fast, within the dough.
If you leave it to sit it's going to be releasing bubbles into the air that it should be releasing in the dough

Stephen Vinarub he doesn’t need to add sugar since dry active yeast doesn’t need anything to eat but the sugar does help indicate the activeness of his yeast. It’s likely that the water may have been a little too warm and “killed” it
nope. you really don't need sugar for yeast to work.
Yeah and make sure the water isn’t too hot, you can kill the yeast.
You don't NEED sugar or honey or whatever it may be that you use, but it does speed up the process. It also proves that the yeast isn't expired.
Having managed a pretzel store that made from scratch soft pretzels, let me give you a few tips. The water and baking soda mix that you dip the pretzels in is what makes them brown, so you do not need to let them sit in the solution, nor do they need to boil, as long as the baking soda is dissolved in the water, that's all that's needed.
Second, when you mixed the dough, please use a dough hook and let it mix the dough and knead it for about 5-10 minutes. It should very much be like bread dough consistancy, then let the dough rest in a covered and greased bowl for at least 30 to 60 minutes.
Third, please don't add the butter and salt to the pretzel bites until AFTER they are baked. Then brush on the butter or better yet, we would dunk them in a large pan of melted butter, then sprinkle the pretzel salt on top of them, putting the butter and salt before baking them prevented the pretzel bites from properly browning that darker pretzel color.

I've been loving the chill af videos from you guys lately. College is super stressful, especially with my last semester being half online, away from friends, my parents are in another state- so this helps a ton when I feel overwhelmed.
i’m currently working from home and i’ve found that there is nothing that helps me concentrate more than putting on one of juliens videos, even just having it on as background noise helps with dealing with difficult customers who don’t understand we’re in a pandemic 😌
