I finally fermented my KSLs with yellow bell pepper, white onions, lemon, garlic, pears and a bit of cardamom. Wow! For a first try, I used a ratio of KSLS/bell pepper of 0,80. The taste is good, and the heat level is high enough, but not fiery! Thank's again for the inspiration!😀 I also made the sugar rush cream sauce with pear and a bit of agave syrup to add sweetness. That's also my wife's favorite!
Fantastic looking sauce Nate, mangoes are awesome with heat and sweet. Do you simply do a 3% solution and add it to the mix, or do you take into account the weight of the tared ingredients? And then keep the weight of the ingredients for future tweaks to it. Awesome job brother! Hope you’re having a great holiday season!
I do 3% of everything... water peppers etc (total weight). Thanks so much Charlie! Always forget how to spell your name so it's probably wrong lol. Merry Christmas my friend!
I bet that a good one👍 I love fruit and jelly in my hot sauces. I'am on a Hot Wing kick. like the tacos, i can't get enough. THE orange habaneros are really bring out the favor of a hot wing i love YUM OK take a knife and poke and slice inside the wing and drum next to the bone. This make it cook even, and the flavors will go down into the wings, bone deep/ season > with chicken bouillon, rose marry, home made poultry seasoning, all salt seasoning, black pepper, of course Habanero powder, a touch of cayenne powder, Let them set over night. i also went to a corn starch coating on them. once fried to a golden brown, out on a towel sprinkle with salt, cayenne, habanero and onion powder The hotter you want them, add more habanero powder i don't let them to hot! i want to enjoy the flavors! Even the bones🦴 are loaded with flavor! YUM
Nate, this looks great, the mango is my fave fruit, I don't know why but I have heard folks call green bell peppers in my area called a mango, again I don't know where that came from pal

How did it turn out? I have so many frozen ksls, I thought about doing a peach or mango with them but not fermented.
it was really good! Everyone I gave a bottle to, loved it!
lol mate - I had a plan A mango for a hab sauce in June this year, but it quickly went to plan B 'Dole' option after I sliced it open!
I wish I thought ahead and had plan b on my pantry - I had to run to the store and grab it LOL
