I love the “That was the stupidest thing I’ve done…..so the second time I did it….” 😂
And then the second time "that was even stupider" XD
I lol’d
That's the scientific method. It has to be repeatable. 😅
Should always try everything twice
I felt kind of sorry for him. Dude had addiction issues and has replaced it with a pepper addiction, at least spice OD isn't deadly
"What makes me an expert is knowing I don't know everything" very wise words there
Indeed! It's a saying of Socrates the philosopher:)
This is what struck me the most. It’s when you know that you don’t know and how powerful that is
"The more I know the more I know I don't know" - me
“Trust the science, believe everything we say.”
The wisest of words as only the fool thinks they know it all
I love all of Ed's interviews, glad he seems to be getting more personal recognition lately
Cuz he's just a cool guy who likes spicy things lol his childlike enthusiasm for peppers is fun lol
He deserves it. What a legend
Dudes a complete joke
I’d love to see him get a full Hot Ones episode!!
Especially considering he worked with Hot Ones on some of their previous/current iterations of the Last Dab!
It wouldn't even phase him. Most if the guests don't even eat the wing. They nibble a tiny bit and then throw away
@@alternativeharvey7 Obviously he’d eat more of the wing and last longer while keeping his cool, I think it would still be an awesome interview!
That might be the most boring episode of Hot Ones in terms of guest reactions
@@sniceverything4944 and I’m okay with that 😊
Dude is so down to earth, highly knowledgeable but doesn't come across as condescending at any point or starts throwing around words nobody else knows the meaning of.
Knowledge of the ancient texts, but in the body with a personality that you want to knock back a couple beers with. What a guy.
Except he's just spouting a lot of things that are just wrong here. Really wish they would do proper factchecking.
He’s the coolest guy tbh
Some might say the hottest! 😂

Reminds me of a professor I had in undergrad. Super smart, really laid back, and always knew how to explain anything to anyone.
Even if wrong. LOL.
Out of all the experts they brought, he felt like the most expert
He looks like a farmer with expert knowledge
This was delightful! He answered pretty much every question I had. I'm going to take his advice and see if I can increase my hot pepper tolerance. I love spicy food, but I'm such a wimp! LOL
Just go with whatever is at your limit and enjoy it. A carolina reaper to a hardened chili nut is as pleasurable as a Madras to someone with low tolerance :)
It is doable. I was pretty much a wuss, but I started eating jalapenos every day with breakfast. After a few weeks I then went up to serranos. Serranos now are nothing to me. I am now making habanero salsa.
@@boxychubbo6922 I went straight to eating reaper and scorpion hot sauces, and like Ed said, I got high and wanted to put that sh*t on everything after that lol
I love how humble this guy is. Fully admits when he doesn't fully know the answer but also dispells myths.
He could easily be spewing falshoods saying his peppers can cure ailments but he sticks to the facts and on goning research in an amazing way.
Except he is, he clearly said that milk and ice cream doesn't relieve the burning sensation, but it's been scientifically proven that it does.
@@shogun2215 That's not what he said at all! He said "you should not chug milk", because "you'll feel a temporary relief", but you can consume too much in the end and that will induce vomiting, that's why he recommends flushing with acidic water.
@@YouPlague He also said that "there's actually nothing you can do" before proceeding to describe things you can do.
@@eldelbarrio2there's nothing you can do to be rid of what you already feel it except ride it out. he's talking about relief. don't pin your lack of comprehension on him.
@@fixthefernback8030 Except it's well known the organic chemistry of dairy actively counters capsaicin, which was never mentioned in this video
I like this guy. Chill, educated dude. You can tell by just talking to him, you learn a thing or two.
I'm allergic to peppers but I find the science behind capsaicin fascinating. It binds to sodium ion channels to mimic a burning sensation like he said. Menthol does the same on a different receptor but with cold. There's a cactus in Morocco if I remember correctly that has capsaicin as a defense mechanism but it's concentration 16 billion Scovilles, it's called Resiniferatoxin. Scientists are looking into the stuff for chronic pain because it's so much that it essentially just burns your nerve endings away.
What is it in the peppers that you find yourself allergic to?
@@mercster I'm not entirely sure tbh. When I eat any my throat feels really scratchy. I had a job at a pizza place when I was younger and green pepper juice got in my glove while making a pizza, I put it in the oven and took off my glove and I had patches of my skin eaten away. I've accidentally eaten paprika and had minimal reaction, so it might just be the oils, when I asked my allergist about a scratch test of any kind I was told they can't test for it. I may only be allergic/sensitive to bell peppers, but if someone cooks spicy food in the house my eyes burn so idk. I'm not taking any risks lol
@@auroramcbride1688eyes burning is normal for everyone lol
@@auroramcbride1688 I have something similar to that happens with me sometimes. What's weird is that it doesn't always happen with peppers, because I cook with them a lot.
So, you are saying it does physically burn nerve endings?
I want to see more of this guy, his energy is out of this world.
I would love to see him on the hot wing challenge
YES! That would be great!
That would be an interesting special episode. An episode where it is not necessarily about interviewing the person, but rather talking about the hot sauces and hot sauce in general would be a fun little chance of pace
He has a few different videos with Sean, as well as supplying a lot of the material Hot Ones use in their sauces.
Shows up, brings his own hot sauce to the challenge.
@@palariousthey pretty much already are his… all the last dab sauces are made with his peppers
this guys answer to being an expert is spot on.
0:15 with all my experience, I completely agree with Ed. Nothing helps the burn. Dairy does give some temporary relief but ultimately just prolongs the burning sensation. Best to just ride it out and as Ed says, enjoy it!
Olive oil works well at getting most of the capcasian off the hands. Then follow up with a soap wash. Basically, use olive oil as a solvent for.... capcasian oil.
What a professional. Explains things well and refers to other experts when he doesnt know something. Great video, thanks for bringing him to the show!!
Love this Q&A! Great guy, great answers! Many thanks.

Ive been watching this for 2 years and i can't believe i still watch this
That's a long video
What a great guy!!! Epicurious makes the best videos --- thanks for the professionalism.
"do not dive into the deep end of the pool" - that's literally the only safe part of a pool to dive into, lol. interesting episode still.
Does anyone have the same weird issue that your mouth is much stronger than your intestine? I can eat scorching hot peppers without trouble, but a few hours later my gut is on fire and it feels like I am pooping lava.
Same!! And it's worse with oily hot pepper sauce/dish. But I didn't start out like this. My guts were stronger when I was younger. I think I ruined my digestive system the way I was eating
I was hoping this would be brought up. I tried the one chip challenge out of curiosity a while back. It burned my mouth something fierce, but I was expecting as much. An hour later, every time my stomach churned it felt like lava was eating away at my gut. Waves of agony that just got worse and worse. I was sweating buckets for hours, and if I got up and moved, the pain magnified tenfold.
yeah it kinda puts a damper on it for me since i love scorpion peppers but the day after is always a battle on the toilet
I didn't when I was younger, now mouth can still handle it, but gut feels the burn certainly.
I go to a local hot pot place now and then. I love getting super spicy food and never regret it until the day after.
To build my tolerance I went to Mexico for a month and half (not specifically for that reason tho 😅) , you eat spicy every meal and it builds up surprisingly fast ^^
"what makes me an expert is that I know I don't know everything" -Ed Currie.
Socrates also said that, which is pretty cool.
"The second time-" bro understands me
Absolute respect. Legend.
all pregnant mothers have a story about what induced labor.
for my mom, it was her standard cheeseburger (she hates cheeseburgers but craved them while pregnant with me) where she took a bite and I was ready to be hatched. i try to eat a cheeseburger every day. not because of that gross story, but because I'm an American.
Thanks Ed!! That was very Ed . . .ucational!! I'm not sure if anyone else has experienced this but my ability to tolerate hot foods has declined as I've gotten older.
One of those people you are very very happy you came across. Treasure trove of knowledge. 👍🏼
Amazing video! I love you Ed!!!
love it ed, well done
I want to try them all ❤️❤️❤️
Ed! Can you talk about growing peppers, and what affects heat output? are peppers grown under different conditions to achieve varying levels of heat and flavour?
This was a great video! I really like this guy lol
Interesting to hear that pepper sauce preserves as it is. I just harvested my first peppers and find out there will be lot more of them than I can eat before they get bad. I just couldn't find any sauce with proper ingredients. I want pepper flavor, not garlic, vinegar or mustard.
I ended up mushing them with tomatoes and put on a freezer packed into ice cube bags. I stored bags into glass container to avoid taste contamination. Then I can get fresh pepper taste around the year
This guy’s the best. His store is in my hometown and he would help out the community a lot.
Ed thank you for sharing your knowledge
Always love Ed
My biggest tip for hot peppers, is to use gloves, when chopping them, if you wear contacts.
Getting it all off your hands is very hard, and then applying the residue directly to your eye, is probably not as bad as Ed's horror story. But you still don't want to to experience it.
That goes for any mucous membrane. Eyes, nose, open cuts, and other sensitive areas.
Ed is so used to them he doesn't use one 😂. For the extreme spicies you need double pairs because the oils in the pepper can actually eat thru the gloves.
If you ever get pepper residue in your eyes you flush them with milk and then saline eye drops
I wish Ed on Johnny Scoville would do a bunch of videos together. Ed seems like a straight up fun guy ! They are close to each other ! If they did any video - leave a link below !
Ed's a national treasure!
Lmao very well explained 😆 0:49
Hi Ed! I found out about your peppers and really got into spicy peppers a few months back. I remember watching this and thinking how cool it would be to get a pepper 'high' and today I finally did! I bought this 'Naga Knockout' sauce which was mostly naga ghost peppers and ate a bunch with a panini. Initially it almost tasted like eating something really sweet and fruity, then the next 2 minutes, every hole in my body was running like a faucet and then for the next half hour I was walking around the city high off my head. Nicest feeling I've had in a long time actually. Thank you for your wisdom.
Love this guy!
How cool is this guy?? Now I *need* to get into spicy peppers. For him.
What a great Q&A. Now I want a pizza to over spice.
we need Ed on Hot Ones
He has a few different episodes with Sean floating around on YT, as well as his company supplying a lot of the material they use to make their sauces.

keep rokkin, Ed! im growing about a doz of your reapers in the back yard now. theyre about 3' tall and gettin bushy. wish me luck!
Nothing beats a cold glass of milk with a really spicy meal, it dulls the pain enough to go back for more
Thanks, Ed 👍🏻👍🏻

this guy is awesome
whenever I get a head cold I breakout the Apollo sauce.
searing my mouth and being able to breathe momentarily is totally worth it.
Great video!
Dude is a legend.
He is a legend.
I was going to ask if there is a cause for concern when people who are not allergic to the Nightshade family plants or the capsaicin, still might pass out or faint if they eat extremely hot peppers, then I realized that there is a fair chance that extremely hot peppers are likely to raise your heart rate, which would explain many situations of discomfort in that scenario.
Best way I found to relieve the heat is to take a small sip of milk and swish it around your mouth and gargle it for around 5 seconds. Just keep doing that and you'll get pain relief without filling your whole stomach with milk.
Great Job
Heartbeat!!!! Put TBay on the map!!
Just watched your pepper tasting vid. Can you recommend some pepper combinations for Chilli?
"The second time I did it.." oh the comedy is amazing
I started on a regular chili and got a red face and watery eyes, so naturally I went directly to a carolina reaper sauce.
Best decision I've made, food wise. I'm now growing my own reapers and they've just sprouted a day ago.
To me ranch dressing helps with the heat for me and keeps the flavor.
It does. I even use it on my sunburns
cheers, I'll Ranch to that 😂
@@peteyprimo7173bruh, use Aloe for sunburns 😂 i mean you do you
"Rub some dirt on it" That is the most boomer thing I've ever heard, but I love it. LOL

This video gave me heartburn
If you want to curve the heat just by a little bit drink milk before you eat anything hot it actually puts a layer of coating over your mouth and your throat and stomach it's not foolproof but it does help a little bit

Mmm sweet stuff has always worked for me. I only eat a bite full though. But I’d like to give citric acid a go.

You know you're a real fan of peppers when you don't mind - or even enjoy - the heat when it hits the south mouth
