You inspire me to cook. I know you're pretty experienced, but the way you make recipes in a home kitchen with typical "tropes" like not having the exact ingredients, not having the fancy machine, being lazy, etc. and still showing recipes can turn out delicious is really inspiring.
Everytime I hear him say "Alright, thank you." I forget about the radioactivity of the food he makes

I enjoy these videos because they make me feel better about my own cooking attempts when I try to follow celebrity chef's recipes. Josh often includes one or two ingredients that are either too expensive, difficult to find, or he's made them himself. And the final dish isn't always worth the money spent on ingredients like szechuan peppercorns or mushroom soup powder, which might never be used again after that.
The pricing by portion shit is also infuriating. I have to have a firm idea of WHAT i'm getting and i don't know a damn place where i can buy "byportion".
I always feel like Joshua's cooking vids are like spend an hour to prep the food you will spend a couple of hours cooking the next day, also get this rare ingredient I imported from a small Chinese mountain village.

He’s actual,y the first ever recipe video I’ve ever watched on RUclips and tried when I first got married. It’s so easy to follow you just watch it and get all the stuff you need. I like it
And his recopies look like a lot, there are recipes that are very simple and easy to do and they're fantastic. Panna cotta is Italian desert and it's stupidly easy to make, zapiekanka is Polish street food that takes very little effort
My technique for the "is the onion safe to consume" game: Cut top and bottom off of onion. If the core looks bad, it is not safe. If the outer layers look bad, peel them off until only good layers remain. The onion is now safe.
My technique is "consume the onion - if i die it was unsafe if i don't it was safe"

The addition of Raclette cheese was a great idea.
Since it melts so nicely, you can use up your additional brioche buns with the cheese (or just use toast). Add a slab or raclette cheese to it and microwave it for 1min 30s to 2min. Then you have a delicious melted cheese toast.
You can also use it as parmesan subsititute on your pasta. You can basically use it as an all purpose cheese I'd argue.

Protip: You don't actually have to keep butter solid when mixing it into bread dough. You can melt it and mix it in at the beginning with everything else. Just make sure it's not so hot that you kill the yeast
Yes,the cheap trick to melt butter quick I found is to put the kettle on,let it boil and pour the hot water into a bowl. But your butter into a cup and then smack it around in the cup with a butter knife. The agitation really helps all the surface area of the butter hit the sides of the cup, making it melt faster. BE CAREFUL NOT TO SPLASH HOT WATER FROM THE BOWL. And like AMTun said, make sure it's not too hot for the yeast, let your softened butter cool down to room temp.

Anytime a burger/sandwich recipe starts with making the buns/bread I immediately leave. There is no way it is worth all that. Being said, I did stay and watch your video
You can just use storebought buns. Its not like the homemade buns excrete a magical juice that makes the burger work, unless joshua knows something i dont regarding magical bun juice
In case someone hasn't mentioned it yet, you soak the onions/green onions in ice water to make them crunchy. I'm not sure if there's any other reason, but that's what other cooks have told me.
