Because if it had to be option 1, the sentence in Japanese should be 「この出会いがあってよかった」Meanwhile, 「出会ってくれて」makes it seem like you're thanking a person in particular for the role they played in the encounter Note: You can view the ZH subtitle by clicking the captions menu and setting the windows colour to black and windows opacity to 75% or 100% to read it comfortably!

I feel like option 1 seems to emphasize chance itself. I just imagine Option3 P will go to feel awkward momentarily like (´・ω・`;)? (Wtf is this girl talking about...oh!) 文脈的にも2が自然なんじゃないでしょうか?文脈は「Pであるあなたが私を見出し、私がそれに応じて、そして二人はここに立ってる。(きっかけはP)」だと思われます。1は偶然性のある出会いそのもの要素が強調されそうです。いつもありがとう。
