  • Okra fry:
    I love okra fry with cashews. You can substitute cashews with raw peanuts also. I saute the okra in the beginning in a pan and cook in the microwave for 8-9 minutes. This helps cut down the overall cooking time. I use this technique for green beans also. You can make this dish by sautéing in the pan only.
    Ingredients:
    2 pounds of okra trim the heads and tails off. Chop into rounds
    1/3rd tbsp salt (adjust to taste)
    1/2 tsp turmeric
    1 tsp chili powder
    1/3’rd cup cashews
    1 tsp cumin seeds
    3 tbsp olive oil
    Here is what I did:
    I took a pan and put it on the stove on medium heat
    I added 3 tbsp of olive oil
    I let the oil heat
    I added cumin seeds and let them sizzle
    I added cashews and let them brown a bit
    I added okra and sauteed gently for 3-4 minutes until the okra is coated with olive oil
    I took the okra out into a microwave safe bowl and put it in the microwave oven for 8-9 minutes
    When done, I took the okra out of the microwave oven and let it sit for a minute
    I added the okra back into the pan
    I sauteed gently for 5-6 minutes
    I added salt, turmeric and chili powder
    I sauteed gently until the okra are all dry and ready. This took another 5-6 minutes
    When perfectly done the okra shouldn’t stick to each other
