Didn't expect a Bao recipe, but have been hoping for some Asian ones. And Bao is one of the best things I have ever eaten. A house guest of ours took a Chinese cooking class and made hum bao(sp) for us. It was so good and unique. Now I order it at Chinese restaurants and have to ask for it as I've never seen it on any menu. Thanks again Sonny, your head and shoulders above all the other cooking shows.
So good! They sell these in convenience stores in Japan (Niku man) for like 99c...all different fillings - regular pork, pizza, curry...grab one of those bad boys out of the warmer and a can of hot coffee and you are set!! Nothing better than a Japanese convenience store!
I've found that marinating these steaks for about 4 or 5 days in garlic , using these same spices and brown sugar and soy sauce . In a bag . And after 4 or 5 days boil in the bag for about 20 minutes , let rest then char . Then sauce, then bao. also another way of doing these is to steam the bao and then smoke and grill . Either way is amazing. Also adding pickled onions inside the bao is ridiculously good aswell

Great recipies and reat encouragement to try even "tricky" techniques. Really like that you are aware of the situation of your viewers who maybe have no access to fancy ingredients and therefore offer substitutes. Great!
That sounds like a perfect excuse to teach them how to cook from a young age! Maybe even find an old appliance for them to assault if it turns out well!
I have been wanting to make pork belly bao buns for a while. Even bought one of those "cool bamboo steamers" and have yet to use it. I am now thinking I would rather do these beef short ribs instead! Thank you for another great recipe, Sonny! You're the baomb.
I work at a fine dining winery in niagara. We braise chuck short ribs, about 200 lbs a week. The process for making the jus is a 3 day one. It's really incredible. I appreciate your style and delivery. Your long form videos are great.

i wish USDA would just put % of marbling on the meat label in addition to choice, prime, select. basically meat under 10% marbling doesn't taste good fast cooked, and below 10% requires special preparation. a big problem is "choice" actually has 3 to 4 levels within choice that the label doesn't tell you. you can have meat labeled with choice with 3% marbling or 8%, and that's a huge difference.
Hey bro, love your stuff. Just a suggestion, can you maybe offer alternatives for some steps. For example, not everyone has a smoker. It obviously won't come out AS soft if you cook it another way, but could you maybe suggest another cooking option to make it soft. Thanks

I've been working on steamed pork buns (char siu bao) for quite a while. This is a hard dish to pull off. On a scale of difficulty from 1 to 10, this is somewhere in the 7-10 zone. Expect to fail repeatedly until you get a feel for the dough consistency. Dumplings are fairly straightforward but bao are hard.
Perfect as always my man. It would be cool to put a disguise on the fridge. Walk past it like you didn’t notice it. Then ask it if it’s seen the fridge. Just an idea. And I’m ouuuuut
cheff sonny I need ur knowledge. When you reheat a soup in a pot, and you dont pay attention and the soups boils again, it produces a sort of foam on the top. Is that bad? what is that foam. I need answers

Great! Yum! The only thing I can suggest to help w buns is to do slightly smaller pinches of dough going around and at the end twist the top.
