- The kids are out for the night and its a peaceful evening in the garden so I take a few moments to design a fall inspired arrangement for a winery. Jason has set about the kitchen making dinner to go with our Focaccia bread and I make a much loved by the kids peanut butter pie. Its one of the last nice evenings of summer and I'm enjoying every bit of it at home with J as he makes a fanatic Smashburger dinner with bacon jam dinner. Focaccia bread
1 3/4 cups warm water
1 package active dry yeast
1 tablespoon sugar
5 cups all-purpose flour, plus additional for kneading
1 tablespoon kosher salt, plus coarse sea salt, for sprinkling
1 cup extra-virgin olive oil, divided
Combine the warm water, yeast and sugar in a small bowl. Put the bowl in a warm, not hot or cool, place until the yeast is bubbling and aromatic, at least 15 minutes.
In the bowl of a mixer fitted with a dough hook, combine the flour, 1 tablespoon of kosher salt, 1/2 cup olive oil and the yeast mixture on low speed. Once the dough has come together, continue to knead for 5 to 6 minutes on a medium speed until it becomes smooth and soft. Give it a sprinkle of flour if the dough is really sticky and tacky.
Transfer the dough to a clean, lightly floured surface, then knead it by hand 1 or 2 times. Again, give it another sprinkle of flour if the dough is really sticky and tacky.
Coat the inside of the mixer bowl lightly with olive oil and return the dough to the bowl. Cover it with plastic wrap and put it in a warm place until the dough has doubled in size, at least 1 hour.
Coat a jelly roll pan with the remaining 1/2 cup olive oil. (This may seem excessive, but focaccia is an oily crusted bread).
Put the dough onto the jelly roll pan and begin pressing it out to fit the size of the pan. Turn the dough over to coat the other side with the olive oil. Continue to stretch the dough to fit the pan. As you are doing so, spread your fingers out and make finger holes all the way through the dough. (Chef's Note: Yes, this is strange. But when the dough rises again it will create the characteristic craggy looking focaccia. If you do not make the actual holes in the dough, the finished product will be very smooth.)
Put the dough in the warm place until it has doubled in size, about 1 hour. While the dough is rising a second time, preheat the oven to
425 degrees F.
Liberally sprinkle the top of the focaccia with some coarse sea salt and lightly drizzle a little oil on top. Bake the dough until the top of the loaf is golden brown, about 25 to 30 minutes. Remove the focaccia from the oven and let it cool before cutting and serving.
Chocolate Peanut Butter Pie
Crust
25 whole chocolate sandwich cookies, such as Oreos
4 tablespoons butter, melted
Filling:
1 cup creamy peanut butter
One 8-ounce package cream cheese, softened
1 1/4 cups powdered sugar
One 8-ounce package whipped topping, such as Cool Whip, thawed
For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they're fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
BACON JAM RECIPE
1 pound hickory smoked bacon slices finely chopped
1 large yellow onion finely diced
1/2 teaspoon salt
2 cloves garlic minced
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1 teaspoon balsamic vinegar
In a heavy skillet or dutch oven over medium, cook bacon until crispy. Using a slotted spoon, move the cooked bacon to paper towels to drain. Tilt the pan to one side and carefully ladle off all but 2 tablespoons of the bacon grease. Add the onions and salt; cook over low heat until browned and slightly caramelized. Add the garlic and cook for an additional 1 minute. Tilt the pan and remove all but 1/2 tablespoon of excess grease.
Stir in the cooked bacon, brown sugar, cider vinegar, black pepper, cayenne pepper, and cumin, and prepared strong black coffee. Let the mixture cook down until slightly thickened and browned; 20-25 minutes. Remove from heat and stir in the balsamic vinegar. Serve warm over crusty French bread or crostini.

The onion bacon relish sounds amazing! I was looking over the recipe and at the end it says to add in the prepared strong, black coffee… But that wasn’t in the ingredients, so how much should we make of the coffee?
The coffee is optional. He said if he does it's he adds about 3 tablespoons
