Hi Jtao. Sorry for our late reply. You can remove the scum from the ribs but I didn't feel it was necessary. Yes we used orange juice sold in cartons at supermarkets. You can get those without pulps because they're cheaper and pulps won't be necessary for this dish. Hope this helps. Happy cooking!

Hi Dawn, yes that's a cast iron wok. Basically you can use any wok except non-stick wok because we're just concerned that the bones will scratch the surface of a non-stick wok. Hope this explains. Happy cooking!
I marinated the ribs overnight, and the ribs were incredible. I served them with a ramen salad and broccoli with tofu. Delicious.

I am not sure what type of pot is AMC but basically all pots, pans and woks are ok. I used packet orange juice which claimed to be 100%(I think.😅)
