As per my experience.....i wash the ikan bilis 2 to 3 times n instantly add it to a mildly heating oil for a minute at this point do not disturb to saute cos it will smudge n tear the ikan bilis....then begin with high heat...after 1 to 2 seconds minimise heat fry untill u feel ikan bilis reaching crispy stage...then high heat again for a second n dish out. 100% crispy ikan bilis.

Kebanyakan Boss yg jual Nasi Lemak mereka malas nak cuci, cuci ikan billis u cuci dengan air pancur, tapis bagi kering dan ambil ikan ini Jemuk di cahaya mataharu dari satu jam or 1.5 jam.. Baru ambil pe goreng, jika u guna Oven bagi kering, memang ikan billis tak sedap dan tak garing.. Ok.. Gd jod.. Kam Sia ( ini Nyonya Style. ).

Just wash and rinse to remove the salt. Why soak it and then spend 8 minutes frying to remove moisture. There is no value in rehydrating. Salt was used to dehydrate and dry out the anchovies. The wash and rinse is only for purpose of getting rid of some of this salt. You dont soak it to rehydrate and then spend mire time slowing frying to remove the moisture. Rehydration adds no value and just waste time.

I soaked them, then fried but not so crispified so put them 3 minutes in the air fryer and they became so hard that quite difficult to eat
