They covered the eggplant with cornflour batter and fried it, just the way we fry thin marinated eggplant slices dipped in besan (gram flour) batter golden brown. We just sprinkle some rock salt over those fries and eat it with a mustard dip.
Not a glove in sight. I'm a new Yorker. Gloves in the kitchen are a requirement here, so it's weird to see someone touch food without gloves on. Not hating, it's just what I was focusing. The food looks great too. I would eat it. Gloves or not.
