    I love making soups during the winter! It is especially nice to have several meals from one pot so less cooking. I’m going to make the first one today, but once I restock my broccoli I want to try the other one. Thank you for the vegan options you have been including! I’m glad you liked the nutritional yeast, it’s hard for everyone to pronounce so don’t feel badly about that. Ha. I am a new Vegan(3 1/2 months now) and never thought I could give up dairy but now I prefer nutritional yeast to Parmesan on soups and in other dishes. That sounds like a great idea about the meal prep service and would be very helpful for busy working moms. I’m retired and have much more time on my hands(when grandkids aren’t here keeping me hopping). I wanted to be a chef when I was a teenager but ended up becoming a nurse instead. I love to cook still and especially food of other cultures. I have an adopted daughter(grown with 2 children) who is half Japanese, so all things Japanese holds a special place in my heart!🥰 I have visited Japan several times too and loved it!!! Now my grand daughters(my son’s girls) want to visit because they love sushi and want to see all the fun vending machines, ha. We have plans to make Japanese Fruit Sando next time they sleepover. The whipped cream and fruit sandwiches that are so pretty when you cut them. Thank you for your videos! (So sorry, this is so long!)😍😘

    Hi, I love your recipes. The lentil used in the first recipe are black lentils. We call it Masoor Daal. This variety of Lentil needs soaking at least for 20 minutes.It is also healthier that way. After soaking it we steam it in a pressure cooker for up to 4 whistles. If you are using a pan , I would suggest you soak it for a longer time,so that it cooks fast. As long as 6 hours of you have the time. :)

    Hi Miss.
    I really love all your traditional Japanese recipes. But the ones that I am looking forward to the most are the Vegan ones.
    Since you asked, I for one, would greatly appreciate more Vegan recipes. By the way, I love your knife work and care with the vegetables. I have been following another Japanese home chef who does many Vegan recipes and actually demonstrates setting up a traditional Japanese table and the correct order of eating. It’s great!
    The main difference between his work and yours is that he seems to emphasize the importance of different types of cuts for each vegetable. Always interesting trimming and final shapes with little to no waste and generally using the entire vegetable. It shows great respect for what nature has provided and makes the final presentation truly beautiful to the eye as well as the palate.
    Thank you so much for all your effort and beautiful meals.

    I think the meal plan service is a great idea. I'm sure there are lots of people, even people who don't have a bunch of people to cook for but are busy and/or just get stressed over trying to figure out meals, who would really go for it.
    One suggestion I do have though, is to maybe make it 2 tiers/levels. There are lots of people out there who get overwhelmed when trying new foods and dishes, even if they want to. So if you had a level for them, which uses less ingredients per dish, but also makes a point of using similar ingredients and techniques as the week progresses (so they become more comfortable), and then slowly over time week by week adding in a few new ingredients and maybe one or two techniques, I'm sure they'd really appreciate it. And of course if they get to the point that they feel more comfortable, they can always move up to the second level. :)

    Adding oats to soup is such a good idea.. they're very filling, the expression is that they "stick to your ribs" 😁 and they're full of protein and fiber.
    When I use nutritional yeast I dissolve it in the stew, I don't think it tastes very nice on its own!

    Miso broccoli soup... Very cool. I would have never thought of that. I love all the healthy fermented foods in your recipes.
    As for meal planning, it's not unusual to write out a meal plan for the week and then grocery shop. We do half the weeks meal prep in advance at my house. About mid week we reincorporate leftovers into new meals and prep for the rest of the week. For example, cooking up more rice than usual means that anything leftover can be used in soup, fried rice and other dishes.
    Thanks for the wonderful recipes! As always your videos don't disappoint.

    Our family loves soups year round! Yes, I love seeing the western fusion recipes, but I also love your traditional Japanese recipes, which I think are often much healthier than the standard American diet.

    I love that knife and meal planning sounds great… but you work too hard!! Your videos that show what you eat all day and grocery store visits are a bit like meal plans!! Whatever you do will be fantastic and beautiful since that is your style 🤩 I love these soups and will try! Lentils have always been one of my favorite foods and I always use the broccoli stems 💚

    Yes very interested in thr menu planning subscription you mentioned. I always find it challenging to find all the different recipes that I would need to put a complete meal or even bento box together. I’m hafu Japanese/American. my mother is 94 years old from Hokkaido but living USA last 60 yrs. I love trying to make her food she will always crave the taste for!

    I have soaked lentils from 1 hour to overnight….that broccoli soup looks very delicious…I was also going to mention the Nutritional Yeast as well. Will have to try these Yum 🥰

    Hello from San Francisco California USA , any beans or lentil soaked it over night then cook , it has two benefits one lentil or beans will soft and easy to cook , two after soaking there's no more gas left in beans or lentil

    I just had the lentil soup and it was delicious!!! My lentils were slightly underdone because I got impatient to wait on them. Ha. The 5 spice powder was an interesting addition! I didn’t have it but I did have all the spices that go into it so I ground up my own by hand. I had my soup with brown/wild rice mixture covered in furikake seasoning and some pickles with roasted barley watermelon tea from Japan. 😋

    Here in Australia, if you have trouble saying 'nutritional yeast', you can just say 'nooch' instead and it means the same thing! Also, I would be very interested in a Japanese Vegan Meal Planner service, depending on the cost. I am a disabled pensioner so I don't have a lot of extra money to spend on those types of things. But it would be very interesting to look at! Thank you for your wonderful videos Miwa! Oh, and what does 'watane' mean when you say it at the end of the videos?

    I eat the broccoli stems by peeling off the fibrous skin and steaming slices of peeled stem. I make a simple sauce of a little mayonnaise and fresh lemon juice to make a thin drizzling sauce. I use the same sauce on the steamed broccoli florets.

    You influence our food to and I am so thankful because sometimes I get in a pattern of making the same American style which admittedly is already inspired by So many cultures and places. Most people here are a mixture of nationalities and people originated from almost every place. That said we have much to learn about appreciation of our global community.. Food is a wonderful place to start everyone needs to eat. We can learn more about each other. I am thankful and appreciative of what you share and teach.     These soups look amazing and I can't wait to try the broccoli miso soup! I love that it is vegan as I have a few vegan friends and I think they will love this soup! I will be giving the lentil soup a try as soon as I restock my lentils. And the weather here is supposed to get a bit colder this weekend both of these soups would be great to bring to work for lunch, or have them ready to be reheated for when I get home. Yup, I'm going to make these for this weekend! I am loving all the recipes! I enjoy your style of cooking and the way you incorporate traditional Japanese foods with non-traditional foods and make something that is easy and quick to prepare but also SO MUCH MORE healthy than getting take out or some frozen dinner! I have found ways to use ingreidients like daikon or miso that I wouldn't have thought of and have used those ingreidients in other random dishes and the dish worked! LOL

    Thanks 😊 for the recipes! They look so good. I can’t wait to try that broccoli soup and maybe a variation of the lentil soup because I went vegetarian last year. You found nutritional yeast in the supermarket in Japan huh I guess I’ll need to look harder then.

    I'm trying the broccoli soup when i get home. On the food service idea, I wouldn't mind it being in an email/newsletter style. If I'm not mistaken, you can post date them to go out on X day but have them done weeks beforehand.

      @@MiwasJapaneseCooking No, I was thinking more about the format. You can send it all once. Recipes + Grocery List for the week and we, as participants/readers can pick the recipes we want to try for that week. Kinda like when you get an email from your favorite food blog.
      However, if you're planning on hosting a class, youtube live, or anything similar then I feel like the advance notice would give people time to gather everything they'd need to participate along with you.
      I know this is an idea you're working on so just take your time.

    Love your videos and I don't usually soak lentils you can but it's not really necessary the cook quickly unlike a lot of large beans like kidney or pinto or black beans they really do better soaking overnight yummy 😋

    Nutritional yeast is great, I almost always have it in my pantry. I sometimes use it in sauces/dressings/soups, but I use it most often on popcorn, with a bit of butter or olive oil or coconut oil, and some salt. :)

    Hi Miwa , i mad a lentils soup with broccoli and brussels sprouts , carrots and onions and guess what i put some oats in it as a try out and it did thickened the soup , the results was very nice with a dash of soy sauce ! I really like your recipes , you always have interesting content ! ( and a great foot massage by your son 😂 ) great video !

    I love lentils 🥰 I usually end up cooking mine for somewhere between 20-40 minutes 🤦🏼‍♀️ I wish I had a better time to provide you. But your soup looks delicious and healthy ❤️

    It's the first time I see a Japanese yoshoku soup that uses lentils. I did't grow up eating lentils, so I still have a bit of a problem with eating them (I can eat them but still not used to the taste, same with chickpeas) but my daughter loves them so I'll be making this for her soon. Hope by that time I have some koji rice again so I can make shio koji :) Instead of dried shrimp dried scallops wil work too (but are so expensive so perhaps more for the new years time hahaha) or dried squid or if meat is not a problem bacon.
    I always make potage from the broccoli stems :) on of our favourites and it helps reducing waste. Never used oats in a soup before. Again one of my daughter favourites so she definitely will love this broccoli soup. It would be great for breakfast!!!! just some tamago yaki to go with it and you have a great start of the (school)day. She loves your fish dumpling soup as well. So I sometimes making it for breakfast :)
    The meal planning idea sounds great, especially since not everyone is used to meal planning and if you want to make Japanese style dishes most people have no idea where to start is my experience.
    If you like I can give you a recipe for a vegetarian/vegan Dutch typical winter dish called stamppot. Not for a video or anything like that but maybe you might find it a fun dinner to make for your family in winter one time :)

      Lentil is not a popular one at all, in fact most grocery stores don't carry them. I personally started to like them. Not for my kids though.. haha

      @@MiwasJapaneseCooking I'll DM a stamppot recipe with ingredients you can easily get in Japan. It is also easy to adapt to a more Japanese style; for example use komatsuna or shungiku instead of kale.

    Hi Miwa! I love soup, I'm Polish and soup is traditionally the first course of a formal dinner. The broccoli soup looks yummy, I need to try it!
    The meal plan idea is lovely, but personally not for me, as I only cook Japanese food for myself... My husband and daughter are unfortunately both picky eaters 😔

    Nutritional yeast is hard to say! It also has a nickname of "nooch" which may be easier to say.

I bought your vegan cookbook and it's absolutely fantastic, I am so thankful for all the vegan recipes you share because it's not always easy to find a plant-based option for Japanese dishes.     I thought both of these recipes were practical and nutritious and delicious. Very useful and I will make them both! Soups (chunky) are probably my go-to food of choice to be able to eat nutritious food that is tasty and filling without over-eating while also being much much easier to digest. I tend to eat Ramen in the evening from a pre-made Stock base. However I change it so it's not too salty and I don't mind a little fat as it's very healthy for the brain and I a not eating elsewhere. By adding healthy ingredients to the Stock base it becomes an incredibly delicious (via Tare and seasoning) and nutritious and easy to digest option. If you have the stock already, then the preparation of noodles (if using or if you have that Japanese machine to make courgette or carrot noodles instead...!) and the toppings is very quick: About 15minutes or so depending. It's incredibly modular and clever.
    I see you have a 3 types of miso soup video: Do you have any more Japanese soup videos? Thank you very much. Also I must say, I can learn so much from adopting your excellent presentation of the meals using the small bowls and it makes the experience of eating more mindful and enjoyable which is something I underestimate, the value of! Thank you.

Thank you and again I cannot emphasis how important the presentation is to the quality of sitting down with family to enjoy the meal together: My parents always lay the table before eating and I never appreciated the importance of this. The Japanese, modular 3 or 5 different bowls presentation is particularly wholesome.
