Ingredients
Amchoor/Dry mango powder 1/3 cup
Sugar 1 cup
Black salt 1 tsp or as per taste
Garam Masala 1 tsp
Coriander Powder 1 tsp
Black pepper powder 1 tsp
Sounth/ Dry ginger powder 1 tsp
Sounf/ Fennel seeds 1 tsp
Kashmiri red chili powder 1 tsp
Roasted cumin powder/bhuna jeera powder 1 tbsp
Water 1 cup
Kishmish/ Golden raisins 1 tbsp (optional)
Melon seeds/ magaz 1 tbsp (optional)
Fresh fruits (mango/banana/grapes/pomegranate seeds) (optional, as desired)
Ginger juliennes (optional)

Great recipe especially useful when we dont have time to process tamarind and dates for this chutney. The idea of adding fresh fruits and dry fruits is also very novel and exciting..Ifwe have dates pulp ready ,can it be addedto this chutney and if so at what stage? This way we can reduce the quantity of sugar which will help someone like me who has to eat very limited sugar ovcasionally.
Thanks for the appreciation Namita! I have never tried this recipe with dates, so I cannot answer from personal experience.
I would say give it a shot with small quantities. I would add date pulp after mixing in all powders, and cook it further till all flavors blend in.

Always made this chutney with amchur , but I never added sounth powder...also never had the idea of the right amount. Of sugar..,,so sometimes it was more and became very thick.....will try. Your method ,thank you so much...

I use sounth powder in many of my recipes. It is a good and quick way to introduce ginger in any recipe!

I have not used brown sugar. I have used raw sugar. The main difference between the raw and cane sugar is in the boiling of the cane juice.The juice for refined sugar is boiled several times to remove all the molasses, whereas raw sugar is boiled only once. For this reason, raw sugar has trace amounts of certain healthy minerals and has less of a synthetic chemical load used in repeated cleaning. But bottom line, it still is sugar! Not recommended for diabetics.

You are welcome Reena! Desi khand means raw sugar. Just as the name suggests raw sugar is raw, that is it has not been treated with chemicals. It's healthier. Brown sugar is different. It is white sugar with molasses
