  • Need some cucumber inspiration? Try Sunomono or Japanese Cucumber Salad 4 ways! Marinated in vinegar, sugar, salt and soy sauce, this sweet & sour cucumber salad makes a perfect side dish. It's light, healthy and incredibly refreshing!

    INGREDIENTS
    2 Persian/Japanese cucumbers
    ½ tsp kosher salt
    1 Tbsp dried wakame seaweed (2 g) (it will be 20-30 g after rehydrated)
    ½ Tbsp white and black sesame seeds (roasted/toasted)
    - Seasoning -
    4 Tbsp rice vinegar
    2 Tbsp granulated sugar
    ½ tsp kosher salt
    ½ tsp soy sauce (or use GF soy sauce)
    - Variations (each ingredient is added to the recipe above) -
    4 pieces imitation crab meat (kanikama) (or real crab meat)
    2 oz boiled octopus (60 g)
    2 Tbsp shirasu (boiled salted baby anchovies) (12 g)

    I didn't have most of those ingredients, so I replaced Rice vinegar with normal vinegar, seaweed with spinach and the meat with Tuna. Absolutely delicious.
    I'm even more surprised because I HATE cucumber normally, but has provided me a way to really like cucumber in my food now!

    The japanese restaurant in my town sells sweet vinegar and sesame sunomono and serves it as a free appetizer. So glad to be able to make it at home now :)

    I love this simple recipe. I use a little more vinegar and I used wakame for the first time…so good for you❣️ I also used toasted black sesame seeds..great contrast. That’s all I had at the moment. 🙏🏽🙋🏻‍♀️👍🏽Mia

    Hi, i love trying new things and i am definitely trying this recipe! I do have a question, is there anyway way we can substitute the granulated sugar for something else? Ex maple, coconut, agave. Or must it be granulated sugar?

    I coincidentally had japanese cucumber today in my kalbi rice bowl. There were literally only 4 slices though and I was horribly distraught. Will have to try this - though I will probably make 1 serving instead of 4 haha

    The one with the imitation crab would be the easiest one for me to make. I also just found out one of the Market Basket supermarkets is selling more Japanese ingredients.

      Just One Cookbook I make onigiri at least once a week after learning that from you even the way you format your recipes makes it so easy for people like myself who are blind and use screen readers and I wish people knew and would realize how healthy and how good Japanese food is for you I eat a primarily Asian diet and by doing that in the past few years I’ve lost more than 100 pounds

    Oishi kata ne. Its summertime. Time for some refreshing sunomono. Perhaps a little slivered ginger would b a worthy addition. U could also use a different variety of cuke in a pinch. Make night b4 to meld flavors. Oi!

      I haven't tried it, but I think you can. Just like other vinegar dishes, you have to counter balance... otherwise it's too sour to enjoy. :)

      yes and im so thankful!!!! many great recipes out there, but only the very special chefs like yourself advise how to adapt the recipe for veggies; especially when a traditional recipe isnt vegetarian, i'm that much more grateful :D

    What's the difference between a Japanese cucumber, and "regular" cucumber? Looks so tasty!

    I was going to make this. But California started screaming that I would die of cancer if I used Seaweed so, I'll just eat a cheeseburger instead. LMAO CA I love how crazy you can be.

      You can research a bit more to read on this topic, but unless you eat CRAZY amount of seaweed, seaweed won't affect us. Even Japanese who eat way more seaweed in their life are not affected by the amount. It's just a law that they have to follow... not very realistic to consume that much seaweed (and I think no one can).

    I've a question related to the octopus...every time i cook it, the skin become slimy and slip away from the tentacle. Maybe i overcook it?
    Could you please tell me your cooking technique to achieve such a pleasant appearance of the octopus?

    I came for the simple watered down sunomono salad you get at simple Japanese restaurants.
    I left with a better recipe that will blow the minds of people who only know the basics.

    I couldn't make this for two reasons.
    1) I'm not a cucumber fan at all.
    2) in the off chance I was a cucumber fan and tried to make this, I'd eat the imitation crab before it would make it to the salad.
    Looks nice though.

      Have you ever tried Japanese cucumbers? Much smaller seeds and firmer flesh. Also much smaller in diameter. Pickling cukes and English cucumbers are other choices.
