FRITO PIE
2 lbs of ground beef
1 can kidney beans
2 cans of chili beans
1 cup of beef broth
1 onion
1 can of diced tomatoes
chili powder or chili seasoning
fritos
shredded cheese
-cook the onion and meat on the stove top until meat is no longer pink. add in drained kidney beans, chili beans, diced tomatoes, chili seasoning and beef broth. stir the mixture and warm on the stove top. pour on top of a bed of fritos and top with shredded cheese.
CREAMY CHICKEN ENCHILADAS
2 cans of canned chicken
16 oz sour cream
2 small cans of green chiles
20 flour tortillas
pico de gallo
avocado pepper-jack or Monterey cheese
-combine the sour cream, green chiles and drained chicken in a bowl. use a fork to stir and shred chicken. spray a 9x13 casserole dish with non stick spray. scoop the chicken mixture into the tortillas, roll and place in the dish. repeat until dish is full and top with cheese. warm in the oven at 375 for 15 minutes. top with pico and avocado and enjoy!
BREAKFAST CASSEROLE
2 crescent rolls
1 lb breakfast sausage
1 block of cream cheese
1 cup of shredded cheese
-spray the bottom of a 9x13 casserole dish with nonstick spray. lay down one crescent roll. cook your meat on the stove and when done, combine with cream cheese. lay this mixture on top of the roll and flatten. top with cheese and then lay the last crescent roll on top. cook on 375 for 10-15 minutes.
BBQ MEATBALLS AND RICE
1 frozen package of meatballs
1 bbq sauce bottle
2 cups of rice
frozen broccoli
-cook your meatballs in the oven according to the package. slice in half and mix with bbq sauce on the stove and keep warm. cook 2 cups of rice (however you cook rice). place your meatballs on top of the rice and enjoy with a side of veggies.
SAUSAGE MIX
1 lb link sausage
2-4 russet potatoes
1 large squash
2 cans green beans
1 onion
olive oil
seasoning of your choice
-slice all of your veggies and meat. layer the potatoes, meat, onion, squash and green beans. then top with olive oil and seasoning. cover with foil and cook on 450 for 1 hour. serve when cooled.

We also 100% prefer jasmine rice over regular long grain! For taste and texture, but also because it reheats so much better! It's definitely worth the extra cost in my opinion.

Put a damp kitchen towel or damp paper towel under your cutting board to keep it from moving around when you are using it.. make your own taco seasoning with chili powder, garlic powder, paprika, and cumin . I always have some made up :o)

You and I use the same brand of Jasmine rice! At the Aldi by me it's $5.65 for the 5-lb. bag and at the regular grocery store it's over $10.00! I love Aldi!!! I don't get there as often as I'd like to because they don't take checks, but I do get there every once in a while, and certainly any time I need some rice! I now rinse my rice before cooking it in my IP because this rice seems to have a bit more starch in it but rinsing rice isn't difficult! Don't you love the ziplock top! I don't use the rice button but please do what works best for you!!! As always my absolute very best wishes to you and yours!!!! Take care!

Do you plan out meals in advance or just on the spot cook? Would love advice on this coming from someone who is actually in similar circumstances in terms of working full time with small kiddos.
I do my best to plan my meals! Helps me stay on budget. I use a monthly calendar to write out what we'll be eating day by day and it helps so much
