You've probably figured this out by now and/or aren't playing anymore, but for people like me who didn't know when I found this video: the answer is no, you cannot change your dice once you start the mini game.
Hi, does the effect die for poisen get resolved immediately and returned, or does a poisen of 2/3 remain on opponent and tick down each turn? You would also have on less die to roll, correct?
@Ordinary Gaming I know I'm late but replying for others who are looking for this answer: it ticks down each turn and you have one less die to roll. Turn 1 it does 3 damage to the opponent and you flip the die to 2. Turn 2 it does 2 damage and you flip it to 1. And repeat one more time. If it isn't removed prematurely, you're rolling only 2 dice max during those 3 turns. However that's 6 damage over 3 turns which is very good for only one die!
Am I allowed to change my chosen dice in between or do I have to use the same dice until the end of dangerous darts? Thanks in advance.

Probably they put something better in the reference and keep the Dangerous Darts rules only on rulebook.

Yes! You use one less die until resolve all poison through the rounds
