I'm making a plane right now, hand sanding the primary bevel several hours and your video pop up (ring my bell ;)). That is a fantastic simple jig. Cheers!
I suppose that could be fixed by making the angle plate clamp solid at the desired angle. Maybe drill and tap a couple of holes in line with the bolt, near the edges of the angle plate, and install short bolts or set screws that would tighten against the bolt to lock it in place. Maybe switch to the two-eared conduit clamps for added strength. Add a "rip fence" to the plate. Then you should be able to just set the angle and clamp it, and slide the work piece against it while feeding it into the sanding belt until the whole face was ground. You'd probably want to clamp it in different places each time, though, to even out the wear on the belt.
If one thinks heat is a problem, one could use a `Variac Variable Transformer` to decrease the AC voltage, which would lower the speed of the belt (and heat).

if you flip the jig 180' so the belt grinds away from the bevel (instead of in front) it is easier to see the burr form. Good lookin jig

As you sharpen, the angle changes. Check the angle at the end of the sharpening.
