As long as the lid seals you would be fine tasting it for 3-4 years. The problem with reusing jars is you never know if they will seal. We try to just buy jars that rings and caps will fit on. As long as the jar is sealed air can't in and it will never ferment. The stories you make now will be a fascination for your kids and grandkids. After all the time my beautiful wife and I have been here we have thousands! A great thing is listening to our kids tell their kids stories about it. Want to really make a mark keep a journal of daily activities and jobs. I found one belonging to my great grandfather and we can spend hours looking through it. Talking about similarities and differences from the early 20th century to now. I loved the music choices in this video! Great job in getting it put together and editing! Thank you for sharing!

put a bit of cling film over the top of any jar then put the lid on and it should stay fresh the same with tins of paint cling film will stop the paint getting a skin on it
The only issue with putting clingfilm over is that the jars need to be placed into hot water to make them airtight which would probably melt the plastic 😞

Instead of burning the trimmings from your trees and bushes compost them by putting them all in a big pile to compost into mulch. The mulch will be best to add to the soil where you build your garden. What goes into a compost pile? Anything that was once alive, can go into a compost pile. Add water and a little soil and turn it at least once a month and you'll have the best mulch you can add to your garden and plants. The smaller you cut things up, the faster it will break down. Don't waste your resources, use them.

Since I rented a some land and started growing food 4 years ago I have invested in a pressure canner and the jars (hundreds of jars) and have found this a great way to keep your own produce. Its not something we do a lot of in the UK but rural USA it seems to be massive. I just love being able to use canned tomatoes mid winter for a meal knowing where they came from. It would give you more consistent results that older jars. They aren't cheap to buy but saving the food saves money and its your food. Smelling food has kept humans alive for many thousands of years and your nose is a fairly good judge.
I think you 2 are such sweet souls. You seem so stait forward honest and well meaning. Absolutly no falsness. That is why I subscribe and always makes tums up. Good luck to you. :)

Really glad to see you got the gravel in to get up on your land. Now you should look around for a used tractor. Your neighbors might be able to head you in the right direction. You need one with a scraper on the back and a crapple on the front. That will take an extra hydraulics called a “third function “. That channel you dug could have been done in minutes with no trouble at all. You could also drain the water from other areas you can’t drive on. Because of the water standing. It just a tool but one that is really nessacery now. Everything you do on the land. The tractor will do it faster and better. Later

You talk about getting the water to run off your land. I'd encourage you to find ways to keep it on your land.... two ways. 1) Using berms and swales set up on the level contours of your land you can capture that water and soak it into the berms and grow trees, vegtables and fruit year around. 2) By incorrperating "Keylining" into your berms and swales and collecting the water into a pond you can then use it during the months you don't get rain. Research "Keylining" on the internet. It's a farming thechnique from Australia.

Just an idea, where u have put ur water containers now next to outdoor kitchen, perhaps when Dan is feeling better he could build a fence between the water containers and kitchen just to hide them, and grow a couple of plants up the fence? RAM PUMP = FREE WATER Please watch Nomadic Movement vloggers in Panama. The 4-5-23 video mentioned their Ram Pump. They bring water up 80 ft and move it 300 feet WITHOUT ELECTRICITY. Maybe you can do this too. Basic "pump" hardware costs less the $100 USD. Then add hose and spigot costs ... but the pump does not need electricity. I am surprised this is not known by more people going off grid. Btw, a university has published detailed drawings of the required equipment. They work.
I think you two possess more than just tactical skills like building experience. You possess problem solving skills, a great positive attitude and support for one another. Those are the skills that will make you successful.

Please watch Nomadic Movement vloggers in Panama. The 4-5-23 video mentioned their Ram Pump.
They bring water up 80 ft and move it 300 feet WITHOUT ELECTRICITY.
Maybe you can do this too.
Basic "pump" hardware costs less the $100 USD. Then add hose and spigot costs ... but the pump does not need electricity. I am surprised this is not known by more people going off grid. Btw, a university has published detailed drawings of the required equipment.
