I use barley malt extract, or sometimes marmite. I suppose worcestershire sauce would do nicely too. Although, I don't really like mushrooms, which is sad, I'm missing out.

My grandfather served in the army during WWII. He had his fork from the service and ate his Supper with it every night. After he passed, my grandmother gave it to my brother. Now he eats his supper with it. I love that you have your father's special fork. Thank you for sharing the story.

My dad was in Cyprus in the early 70s he was in the Royal Signals iirc. Also I was legit expecting a literal counting fork. Also the scabious looked like a microscope close up of the rona
Fun fact about my family's dinnerware, most of the forks and spoons and several bowls came from airline surplus store so the forks and spoons are shorter and smaller in size because they're intended for airplane use and not home use. My dad hate those forks.
We've done that one - park the car at Bishopstoke Rec, then walk to Winchester, afternoon tea in a nice little cafe somewhere, then train back to Eastleigh to get the car.
@Withnail A friend of ours has done most of the coast on his bicycle on a very tight budget, camping or staying with friends overnight wherever possible, with the occasional B&B. His biggest budgetary constraint was time off work as he is not salaried so he's done it in three separate trips over a couple of years.

Great video! You mentioned walnut pickling and am hoping you do a video on it! I got a pickling recipe handout years ago from Woodwards (a great store that eventually went out of business) and there was a recipe for pickled walnuts but I've never made it or known anyone who has.
I'm a flatware snob too. It's gotta be stainless, properly balanced and comfortable. I like using medium forks that slot between salad forks and dinner forks. The spoons have to be tablespoons, teaspoons are for suckers. The steak knives must have wooden handles and full serrations and butter knives are a waste of time. I've got a problem.
If you follow a single path its a labyrinth rather than a maze which tend to have choices of direction. Theres a similar one in Saffron Walden in Essex although yours looks bigger

That fork looks close to my perfect fork. Long tines that aren't too thin, chunkier handle but not too chunky on the forking end. Very nice. Need to find a beauty like that for myself.

My grandad was stationed in Cyprus, I think In the 60s/70s. I’ll have to ask my Nan. Cyprus is a beautiful country, we went for holidays there many times when I was younger. We even got a award from the tourist board over there for coming to the island for 25 years
Here in Hungary we have a terrible fungal infection destroying the walnuts, they turn black and jelly in the inside. But I will try pickling next year, they may still be edible before ripening. I've never heard of eating them that way. Looks like a 100 year egg.

Great content again. I wish I had the competence/confidence to forage fungi. There's another Mizmaze at Breamore manor just north of Fordingbridge. Its adifferent kind to the one in the video. You park by the manor house and take a public footpath through the grounds to the maze hidden in a coppice. Quite a nice walk with the hound.
It did take me a long time to get to the point where I was confident enough with fungi ID to eat what I found - before that, just lots and lots (literally years) of taking the book out with me, studying, comparing. Now, there are probably still only about a few dozen species that I seek out for the table, and can identify with complete certainty
Another great video. I did the St. Catherine's hill climb recently: its some slog. I put my drone up first to see if it was worth the climb...it was. Got some good "footage" of the miz maze too. I have a fork that has my grandfather's initials stamped into it. He used to take it to work to eat his lunch with. He passed away when I was 8yo, so it means a lot to me.

There was also a miz-maze near where I used to live, in Leigh, Dorset. (pronounced "LEE") Unlike the one on St Catherine's Hill, it is now a relic and cannot be seen. I didn't realise there are only 2 existing miz-mazes in the UK.
That fork is amazing! In such good condition too, also as your doing a channel update, can I ask if you will be doing anymore videos to make 3 meals a day for a limited budget?
With the old fork, I've still got (& use daily) a whole set of "Viners' cutlery that my parents bought in the 1970s & also quite a few of the old 'bone' handled butter knives, some of which belonged to my grandparents, some of these knives, also made by 'Viners' have 'by appointment the King George V' engraved on the blade so are over 80 years old! The mushroom dish looked unusual but tasty, obviously you know what your picking, otherwise eating wild mushrooms is a bit like Russian Roulette!

A maze that only goes one windy way like the one featured here is originally known as a labyrinth (i believe). A maze is a many pathed puzzle with dead ends etc. A labyrinth is a test of patience and resolve. I love your videos. So much.

Historically there's a difference, but that's my own pedantry regarding etymology (got bachelors and masters in creative writing can't help it). I do love your vids honestly. I understand the zen of the perfect fork. I have the Oneida pattern called Flight, and absolutely love the set (except for the salad forks, which are too stubby). My dinner forks are very similar to yours, at least on the business end.

That pie looks delicious! It is the color of mushrooms, and I love mushrooms. Interesting to learn a bit about that hill. I also enjoyed the foraging, especially how you were so familiar with the offerings in the area and have favorite walnut trees. On a separate subject, I was wondering about gherkins. I’ve seen several videos, one today, that involved british cooks making sandwiches and using gherkins. I wanted to buy some (I’m so suggestible 🤣), only to realize there are sweet and dill. Online research increased my confusion by adding Branstons and cornishons to the field. So my question is, what sort of gherkins do folks in the UK use on their sandwiches?
I think the thing that might be confusing you is that the term 'pickle' in the UK is used as a generic catch all for any kind of vinegar preserve, so when people talk about a 'cheese and pickle sandwich' they are probably referring to a chutney (of which Branston is a popular example) rather than pickled cucumbers (which are typically called gherkins here, regardless of size/sweet/sour) Branston isn't the best pickle, IMHO, but I have Jenny's homemade green tomato chutney, so I am very biased. To confuse matters further, the UK usage of 'chutney' is also quite different from the Indian origin of the term
I still eat soup and cereal with my grandmother's spoons. There's only 2 left but in middle age I'm still using them. There isn't another spoon that fits the job. Rest of my cutlery? I spend forever choosing it and then use it till it breaks. I think the latest lot has been going 15 years...

we never went without a book
but we only ever took like 4 types of mushrooms home

Never thought I'd be so interested in a fork but here we are
There was also a miz-maze near where I used to live, in Leigh, Dorset. (pronounced "LEE")
Unlike the one on St Catherine's Hill, it is now a relic and cannot be seen.
I didn't realise there are only 2 existing miz-mazes in the UK.
That fork is amazing! In such good condition too, also as your doing a channel update, can I ask if you will be doing anymore videos to make 3 meals a day for a limited budget?
With the old fork, I've still got (& use daily) a whole set of "Viners' cutlery that my parents bought in the 1970s & also quite a few of the old 'bone' handled butter knives, some of which belonged to my grandparents, some of these knives, also made by 'Viners' have 'by appointment the King George V' engraved on the blade so are over 80 years old!
The mushroom dish looked unusual but tasty, obviously you know what your picking, otherwise eating wild mushrooms is a bit like Russian Roulette!

A maze that only goes one windy way like the one featured here is originally known as a labyrinth (i believe). A maze is a many pathed puzzle with dead ends etc. A labyrinth is a test of patience and resolve. I love your videos. So much.

@@AtomicShrimp in modern language maze is synonymous with labyrinth. Language evolves and the meaning is perfectly valid either way. Historically there's a difference, but that's my own pedantry regarding etymology (got bachelors and masters in creative writing can't help it). I do love your vids honestly. I understand the zen of the perfect fork. I have the Oneida pattern called Flight, and absolutely love the set (except for the salad forks, which are too stubby). My dinner forks are very similar to yours, at least on the business end.

Hey shrimp just wondering... You have eaten nearly every meal as an adult with the same fork? So you wash that particular one after breakfast and again after lunch and then dinner too? Just wanted to make sure I understand.
It's easy.
Yes. We don't have a dishwasher, so we wash everything by hand immediately after each meal usually
I feel like the sentiment is it's his favourite fork so it finds a use daily, and of course you can't exactly eat breakfast cereal or porridge with a fork! Or luncheon sandwiches I'd wager 🙃😁
Of course only meals that require a fork. Attempting to eat blancmange with a fork would be both difficult, and impossible

That pie looks delicious! It is the color of mushrooms, and I love mushrooms. Interesting to learn a bit about that hill. I also enjoyed the foraging, especially how you were so familiar with the offerings in the area and have favorite walnut trees.
On a separate subject, I was wondering about gherkins. I’ve seen several videos, one today, that involved british cooks making sandwiches and using gherkins. I wanted to buy some (I’m so suggestible 🤣), only to realize there are sweet and dill. Online research increased my confusion by adding Branstons and cornishons to the field. So my question is, what sort of gherkins do folks in the UK use on their sandwiches?
I think the thing that might be confusing you is that the term 'pickle' in the UK is used as a generic catch all for any kind of vinegar preserve, so when people talk about a 'cheese and pickle sandwich' they are probably referring to a chutney (of which Branston is a popular example) rather than pickled cucumbers (which are typically called gherkins here, regardless of size/sweet/sour)
Branston isn't the best pickle, IMHO, but I have Jenny's homemade green tomato chutney, so I am very biased.
To confuse matters further, the UK usage of 'chutney' is also quite different from the Indian origin of the term

I still eat soup and cereal with my grandmother's spoons. There's only 2 left but in middle age I'm still using them. There isn't another spoon that fits the job. Rest of my cutlery? I spend forever choosing it and then use it till it breaks. I think the latest lot has been going 15 years...
