      @@stevencampbell7394 black pudding = blood pudding = blood sausage; essentially it's sausage but made with pork blood & oats in place of minced meat, the oats absorb the blood to give it a minced meat consistency; it's delicious BTW.

      @@anti-ethniccleansing465 My grandparents kept pigs and made sausage from it, including blood sausage which we sliced onto bread like ham sausage. I don´t recall what it tastes like because it´s been ages since I´ve eaten it or any form of sausage, but I do remember that it was delicious. A lot more intense than store bought sausage of any kind and more intense than other homemade ones.
      It´s no more or less disgusting than the general process of making sausage.

      Why do you have to name everything after things that they are not? Vegan cheese is not cheese in any way, vegan bacon is not bacon in any way. They're not even CLOSE to the real thing and don't say that they aren't trying to be because they clearly are. If you don't like animal products, then don't try to imitate them.

      @@looksirdroids9134 Nut and seed butters don't have butter in them, and in British English the word 'pudding' can mean so many things from a Yorkshire pudding to a steamed suet dessert to a savoury black pudding. Whilst I understand why you take issue with the words used to describe non-meat products, the answer simply seems to be that language changes as we try to use the words we have best to describe whatever happening and what we're trying to do. Plant based products aren't trying to lie to you about what they are, they're just using the words already available to describe something

    The thing about cooking without meat is that, even if you eat meat, and enjoy meat, and have no moral issues with eating meat, its a fun challenge, ans requires you to get out of the sometimes repetative cycle of cooking meat meals to adapt and make something new. Whether it be attempting to replicate a meat based dish, or just experimenting and mixjng things up, its fun, usually quite healthy, and might even lead you to a new favourite meal.
    You don't need to be vegan or vegetarian to have fun with meals that are.

      @@looksirdroids9134 my comment was explicitly about using non-meat ingredients in new ways and experimenting. A challenge for yourself to improve your cooking skills and use non-meat elements as core elements of a dish rather than tertiary elements.
      If you take away from that "eat a head of iceberg lettuce" I don't know what to tell ya.

      Honestly, I live with 3 construction workers, I've never seen them eating fruit, and 90% of the time no veggies either! Just chips, deep fried meats, processed meats, eggs and cheese 😳😲🥺

      For me it's more the resent converts, they come off as pushy, a guy I know that's a vegan for a long time sed he felt the same he's been doing it for 40-50 years and only machine it wen he came over to eat. More recently it's part of there Introduction , "hi I'm Dave a strict vegan ect. " but it's like it's sed to be in some way Superior and make me feel bad. That not to say there are people that are jerks out there. I'm a each their own thang , just don't trying and shove it down my throat.

    Thanks for this. My wife is vegetarian out of necessity and I am by convenience. Always love experimenting with new recipes to push the boundaries. Weve been trying to replicate the classic English Breakfast and she loves it so far- im going to surprise her with this next week! Fantastic work.

    Fry some mixture up before cooking the final version then adjust - great tip, maybe obvious, but I wouldn't have thought of doing that.

      Its what you do when making sausages or burgers without a precise recipe - because you wouldn't normally be able to taste a raw sausage meat. Ironically, there's nothing in this 'raw' mix that wold actually be unsafe to taste

      Bethena Yeah I can't remember the number of experimental recipes I've tried (usually making my own veggie burgers) that have been kind of ruined by the wrong mix of ingredients, that at the end I've thought "oh should've done a little batch test part way through". But then the next time I'm experimenting, I completely forget to do it again haha.

      Atomic Shrimp I like that you took the time to cook up a little bit as you would sausage even though you could eat the mix raw. Cooking it up is closest to how it will be served in the final dish and therefore allows you to adjust flavors accordingly and more accurately than just tasting the slightly cool raw mixture.     Honestly i would never want to eat normal black pudding (not vegan, just never grew up with it and i dont find the idea of eating fried blood appealing) but i love mushrooms and would totally try this mushroom black pudding.

      I might, might, try a bite of real black pudding. However. it doesn't appeal to me. That being said, I might like it. Never know until you try it.

      I eat it all the time, but honestly, if I hadn't grown up eating it (not knowing what it was) I probably never would've even tasted it, or wanted to. The idea of it is just so nasty, literally fried pig blood, but it just tastes so good that it's worth it to me. I feel crazy.

      @@AquaJV you're not crazy, people have used all parts of animals for centuries out of necessity, some of those dishes evolved and became delicious. I love offal, I find it more special than regular old boring meat. Chicken hearts are amazing, so is brain

    The most authentic vegan sausages I've tasted are the Richmond meat free ones, much better than Meatless Farm imo.

      @@simeonellinger2064 regarding vegan meat substitutes in Great Britain on atomic shrimp; DNA testing of Field Roast showed they may use animal extracts as flavoring. They keep it below 10% of the content so it doesn't have to be listed. Tofurky does not use it and has a variety of sliced sandwich products and chunks for stirfry or stew.

    Mr. Shrimp, I've got a 6yo, he has made it his personal goal to soak the outside world in urine; should take him a while to get across the pond though, so you're foraging grounds are safe for the time being.
    I'm very interested in giving this a go; I freaking love black pudding but only have it a few times a year for health reasons (I have high cholesterol, working on it though, mainly so I can eat more black pudding, and bacon, and sausage, and steak, and buffalo wings). Pickled walnuts would be difficult to get my hands on however.
    *SUGGESTION* get a synthetic/vegan sausage casing for the next round.

    Yay! SO glad you tried again! I think I would still have added some beetroot and nettles with the wild mushrooms, just for the slightly sweet flavours ... delicious! I grew up eating them! Dad let a nettle patch grow in the garden year round and we ate them regularly instead of dark 'greens'. Your nettle soup reminded me of those times! Love seeing your experiments - whether successful or not! (for the record - I don't like black pudding, but would happily eat either of your concoctions!!)

      In Romania people use nettles like spinach, only in the spring when young. For people that can't forest, they sell them at the farmers market too! I love them

      Honestly, I'd be delighted. If you're going to try to recreate this with commercially grown mushrooms, then maybe the most opened-cap chestnut mushrooms you can find (like the 'misshape' ones the supermarkets sometimes sell in big boxes)

    Cool. Big fan of mushrooms. Glad this turned out alright for you! Edit; Oh, before I had a set of circle cutters, I had two can spanners, one left the round seam on, the other left a sharp edge. I'd keep various sized top and tailed cans to put me on, worked a treat. Made for great egg poachers, biscuit cutters etc. Due to the nature of them, I would swap them out regularly.

    Some thoughts and ideas I thought I'd share!
    You can buy pickled walnuts from Sainsbury's if you can't/haven't made your own.
    Perhaps a burger press would work well for shaping them? Cookie-cutting and then slicing seems to make them break up a bit.
    And the old recipe Meatless Farm sausages were so much better. The new recipe tastes the same as the Quorn ones which are nowhere near as good.

    I’d try this. Love mushrooms and I loved having black pudding when I visited Ireland.

    The spice blend and use of oats and barley reminds me a lot of my veggie haggis recipe - I use a bit of dried TVP rather than mushrooms though. I've heard molasses (used sparingly) can add a bit of the iron-ey flavour that one expects from meat products too - might be worth investigating!

      @@AtomicShrimp I became Vegan this year, so many good alternatives available now. Best decision I have ever made. I found it easy, and I grew up having to catch and prepare some of our own meat. I recommend the Bosh cookbooks for ideas.

    Great video! I only eat plants and having a sausagy type dish is always a treat! I don't forage mushrooms, but I have a great farmers' market nearby with lovely mushrooms sometimes. I also often buy marked-down produce, so I'm really happy to have a great use for old mushrooms!

    During a trip to Scotland a few years back, I was able to try vegetarian haggis. I've never tried real haggis (being born and raised in Australia, and becoming vegetarian as an early teen- well before I first ever travelled internationally), and I don't expect it actually tasted that much like the real thing, but I thoroughly enjoyed it nonetheless, and it was nice there was an alternative to enable me to something akin to the experience.

    I must say that the final texture of your 'black pudding' is identical to the real McCoy. I'm a huge fan of white and black pud, so there is no compromising for me. However, I love aged mushrooms fried up with my brekkie. I'd have no issue with allowing these imposters to sit beside my blood puds on a plate. Well done, fellah!

      @@rachelembletonpalmer5891 Traditionally, it's made from oatmeal and suet, with a strong mix of onion, herbs and spice. Sometimes a fatty cut of pork (shoulder) is a substitute for beef suet. It is almost identical to some varieties of black pudding, but without the pig blood. I prefer the Scottish black pudding because of the addition of oats, hence, it's closeness to white pudding.

      @@AtomicShrimp are rosehips directly edible? I thought they had spikes or hooks inside that hurt to eat unless you cook them or make a tea.

      They are full of horrible litlle fibres along with the seeds (people used to make them into 'itching powder' as a joke), so yes, they are not to be eaten whole.
      I think they are probably way too sour even to nibble the ripe flesh off the outside, so they can either be prepared by removing the seeds (very laborious) or cooking and straining for their juice

      @@AtomicShrimp in germany there is a breakfast spread called "hiffen mark" which is essentially a dialect term for "hagebutten mark" which in turn is something like a sweet rosehip marmelade

      Atomic Shrimp are the dried ones edible? I bought some rose hips to make tea with, they were not whole but in pieces. I didn’t know about the hooks and nibbled on some, as I enjoy tart things. I didn’t have any noticeable adverse effects, but neither did I nibble very many...

    The English black pudding is so different from the one those of us with Caribbean roots eat. No oats in ours. We put rice, and the seasoning is minimal. It's backbone really is pork blood. This looks interesting. I'd give it a go.

    Texture looks great, can I suggest you wrap the black pudding in cling film and simmer it in a pot. No need for flour, you can put a little oil again just to be safe. Then cool them down for the night. Unwrap and slice . Will help you keep the circular shape :)

    As a long-term vegan who used (before) to love black pudding, I watched this with interest - wonder if a) adding chunks of chilled or frozen veg fat b) some sort of iron supplement might be an idea - will have to try those out & see!

    Videos like this are really the reason why I like Shrimp so much
    I'm 23 years old, and many people that are my age that I know shy out from just trying new things out, and I don't want to get started on my parents or grandparents
    Shrimp here is just making his own Recipes for Vegan Black Pudding, not because he wants to be Vegan or something (there is nothing wrong with that btw.), no he is just doing it out of curiosity
    That's something, even if it seems small, that I really admire in people, that drive to learn or try something new even when it's not necessary

    I tried the Aldi vegan breakfast pack in January, it had 'black pudding', couldn't tell the difference, it was spot on. It was made by Simon Howie.

    I love this. I'm neither vegan or vegetarian, I just love trying different things. I also love mushrooms. So this is something I will try. I also manage to keep some HP sauce on hand even though I am in the U.S.

    Just to make people aware, the normal "Marigold Swiss vegetable bouillon powder" is not vegan because it contains milk powder.
    Be sure to buy the vegan version, if you are after a 100% vegan recipe :)

    If you ever want to do this again, the meat free shroomdog sausages from Sainsbury's are the best I've tried. They fit the theme too!

    The black pudding looks great and bet it tastes equally impressive. I think I would actually prefer this over real black pudding. I also appreciate that the ingredients used would be relatively easy to source.

      I actually found these in the same field as the Agaricus mushrooms - both species grow in rings in grass - and the thing you might see from a distance, before you find the mushrooms is the ring of slightly greener/darker grass; the mushrooms actually feed the grass causing it to grow lush and green

    one thing that is used to create the illusion of meat in the industry is häm, basically a compound similar to red bloodcells. also I've seen a german website that used liquid iron supplement as an diy replacement for häm.
