Yeay. Berjaya masak ikan singgang. For me personally, i okay with whatever ikan you use for cooking ikan singgang. As long as the dish have balance of sour from asam keping, masin from garam, pedas from cili, umami from fish.
The vegetable that SAB's wife eats we as Malaysian call it ' Ulam'. Ulam is uncooked vegetable ( similar to salad) that we eat together with rice. We usually dip it with sambal belacan, budu or cencaluk. In Malaysia, common ulam that you can try are: 1) daun selom (Oenanthe javanica) 2) cucumber 3) petai / stinky bean 4) jering/ jengkol/ Archidendron pauciflorum 5) pegaga/ Centella asiatica 6) ulam raja/ Cosmos caudatus 7) long bean 8) kacang botor/ winged bean 9) kobis/ cabbage 10) peria/ bitter gourd
ikan singgang is like THE home-cooked meal of malaysian. Glad you guys could tried it. Actually I always eat it in a bowl like miso shiru gohan style, when I dont have the ulam. No definite way to enjoy it as long as you enjoyed is what is mattered. The hot soup is to die for in rainy season and having it in a bowl with rice is super comforting.
We are Sarawakian people of Malaysia called this menu " Rempah Asam Kunyit"....and whatever fish do you use to cook this menu also nice n yummy ....Well done to both of u....So proud of you as a Malaysian people....❤️❤️❤️🥰
13:40 glad ichang point it out. I was saying the same when jimmy take small amount of the belacan to bakar. My suggestion, you can also include tomatoes in the sambal belacan, either pound it together after the chili, or just pinch it lightly in the bowl of sambal instead. It will lighten the spiciness abit, and become sweet. ☺️
And tomato also give soury taste to sambal belacan, it will cut a little bit spicy of sambal belacan 🤤. I always mix it together. It taste like air asam utara.
If you dont want the kuah/soup to get too spicy, you can just slit the chilli into half and put it in the kuah so that it is less spicy. If the gravy is in mild spiciness, the dish would be perfect for cold
The fish that you used was “ Ikan kerisi”. Also a good fish for singgang. When cook singgang, better to let the ingredients and the water to boil first, than put fish in especially if the fish is soft to avoid overcook.
FYI Ikan Singgang is our version of a Poor Man's Meal because most of the ingredients are available around our traditional homes.. Fish from the seaside / river / paddy field, chillies and herbs from the backyard.. In fact you guys should make a series of Poor Man's Meal videos.. it could be a sleeper hit..

I think the fish you cooked it's called Ikan Kerisi in Malaysia... it's okay with any types of fish you choose for cook singgang... some people use ikan kembung (makarel), siakap etc... keep it up ichang n jimmy, I always impress with both you effort cooking Malaysian dishes
Ahhhhh singgang is my fav!! Especially when it is cold on rainy days + spicy singgang = perfect combo. Eating in plate with little soup never satisfy me. I would normally put the rice in bowl and drown my rice in the singgang soup. I do that with Malaysian tomyam soup too. Boil the soup to the max heat, pour the soup to the bowl with rice then eat slowly while its hot aaaaa you will enter the gate of heaven. I dont even need the ulam and sambal belacan just this alone makes me happy 😍

'Ulam' is not specific vegetable. We call it 'ulam' when we eat raw vegetable, or boil them in short period of time with water only.. also when we eat it, we can eat just like that with rice, or dip it in special sauce like 'budu' or 'sambal'..
That vege looks like parsley or celery leaf. For a substitute it's ok but the one we usually eat have different fragrance, some minty and refreshing. I think Hong Kong don't have the vege like we have in South East Asia. I have a suggestion, maybe you try to ask a Malaysian or Indonesian where to find ulam in HK.

Ikan singgang Kelantan style in the simplest form you just need the asam keping and lengkuas( galangga) as condiment and salt to taste. For spiciness or pedas you eat with sambal or birdeye chili squashed in some budu.

It's one of my favorite when my mom cooks this for us! The asam from asam keping, spicy from chilis and sweetness from the Ikan really satisfying! More yellow more better. Can't go wrong with rice and sambal man. I could eat it for days. Thanks for trying the Malaysian dish and step out of your comfort zone. Respect.
If the sambal belacan is too hot, you can use some large red chillies and some of the small ones (which is what i usually do). A tip to making sambal belacan is to pound the chillies, belacan and salt together so that it doesnt splatter on you while you are pounding. Then add the lime juice. You can eat the sambal with basil leaves, cabbage, long beans, cucumber. Eat with any veges that makes good crunchy salad. Ichang has a good sense of malay cooking. Well done girl 🥰

i am always happy and mouthwatering watching you guys eat and cook, but i feel sad you guys didn't get to cook fried salted gelama fish, it is very delicious to pair fried salted fish with singgang coked fish topped off with ulam(raw vegetables) and sambal belacan. adding chilli sauce to rice eating with turmeric fried fish/turmeric fried chicken is also malaysian thing to do!

Think the ulam u guys got is different. The one ur looking for is called ulam raja or kings salad or Dì huáng wū lán in chinese. It's a very fragrant herb with a light citrus tone. Pairs really well with sambal belachan.
Kudos to iChang and Jimmy for trying new recipes again. 😉 Few recommendations as ulam selections to pair with sambal: - Brinjal/aubergine > (usually the long type or the grape like size, not the big round eggplant type), can be blanched in boiling water or mildly salt brine until the flesh is soft or eaten raw - Young kangkung leaves > raw - Sweet potato leaves (daun keledek) > blanched - Young papaya leaves shoot (pucuk betik), and the bloom (bunga betik) > blanched, taste a bit bitter, make sure to wash away the sap (getah pokok) before blanching - Tapioca leaves > blanched - Water celery (daun selom, like the ones SAB eaten) > raw, fragrant - Indian pennywort (daun pegaga) > raw, please mind that some species has really pungent taste (just eat 1 or 2 leaves per bite) while some are mild and fragrant while chewing - curry leaves shoot and the bloom (pucuk & bunga pokok daun kari) > raw, taste like mild curry 😋 I saw that you use parsley (daun sup) as ulam. Never tried that but now I am interested to try. 😜
The fish is perfect for that kind of singgang.. I call it Singgang Asam.. Dont be to shy with the broth in the rice 🤣.. I usually sip the broth in the plate.. Congrates and thank you because cooking Malaysian dish.. Im honored..
This dish is best cooked with fresh fish! Since it doesnt have many ingredients, so the umami taste really depends on the fish. You can always reduce the chillies or remove the seeds to make it less spicy. Yes its is a homecooked and traditional dish we you usually don’t find it in restaurants. This is my comfort food during rainy days 🥰 btw ichang pointed out the belacan part is soo malay 🤣 i found it too little too lol
That's right..but in Terengganu singgang has two option,with turmeric,ginger and the other one is with chilli(singgang pedas) by using Nemipterus japonicus (Ikan Kerisi)
Ichang... for the belacan... use a dry wok and fry until it becomes like dry powder and keep in jar.... the best for samba belacan. Our home recipe... bellman (powder), red chillies + bird eye chilly, lime or calamansi juice, salt, 1 pc of shallot ... all pounded

Yes if the fish is overcooked then the fish will taste dry and there'll be no more fish fat in the fish.
For me, it's ok if we boil that fish together with the ingredients. I always cook like that, but make sure cook it with slow fire.

I feel that the ikan singgang is truly a SEA dish. U can see it several variants of this soupy dish all over SEA.

Yeaa that looks like celery leaf. Tastes horrible raw. We use Chinese celery leaves in soup to replace celery.

Try using tuna fish next time you cook singgang..and add more belacan for the sambal..

i am always happy and mouthwatering watching you guys eat and cook, but i feel sad you guys didn't get to cook fried salted gelama fish, it is very delicious to pair fried salted fish with singgang coked fish topped off with ulam(raw vegetables) and sambal belacan. adding chilli sauce to rice eating with turmeric fried fish/turmeric fried chicken is also malaysian thing to do!

in malay we call that fish 'KERISI'.. one of my fmly fvarot fish..soo delicious..singgang also delicious dish expecialy when u got fever or in malay we call 'Malas Nak Masak'... bcoz just CamPak2 only😆

Think the ulam u guys got is different. The one ur looking for is called ulam raja or kings salad or Dì huáng wū lán in chinese. It's a very fragrant herb with a light citrus tone. Pairs really well with sambal belachan.

Few recommendations as ulam selections to pair with sambal:
- Brinjal/aubergine > (usually the long type or the grape like size, not the big round eggplant type), can be blanched in boiling water or mildly salt brine until the flesh is soft or eaten raw
- Young kangkung leaves > raw
- Sweet potato leaves (daun keledek) > blanched
- Young papaya leaves shoot (pucuk betik), and the bloom (bunga betik) > blanched, taste a bit bitter, make sure to wash away the sap (getah pokok) before blanching
- Tapioca leaves > blanched
- Water celery (daun selom, like the ones SAB eaten) > raw, fragrant
- Indian pennywort (daun pegaga) > raw, please mind that some species has really pungent taste (just eat 1 or 2 leaves per bite) while some are mild and fragrant while chewing
- curry leaves shoot and the bloom (pucuk & bunga pokok daun kari) > raw, taste like mild curry 😋
I saw that you use parsley (daun sup) as ulam. Never tried that but now I am interested to try. 😜
The fish is perfect for that kind of singgang.. I call it Singgang Asam.. Dont be to shy with the broth in the rice 🤣.. I usually sip the broth in the plate.. Congrates and thank you because cooking Malaysian dish.. Im honored..

For sambal belacam make sure got sugar + lime juice and balance with saltiness of belacam and chilies or add with garlic*
This dish is best cooked with fresh fish! Since it doesnt have many ingredients, so the umami taste really depends on the fish. You can always reduce the chillies or remove the seeds to make it less spicy. Yes its is a homecooked and traditional dish we you usually don’t find it in restaurants. This is my comfort food during rainy days 🥰 btw ichang pointed out the belacan part is soo malay 🤣 i found it too little too lol

singgang shouldnt be too pedas. less chilli and more turmeric taste like.
That's right..but in Terengganu singgang has two option,with turmeric,ginger and the other one is with chilli(singgang pedas) by using Nemipterus japonicus (Ikan Kerisi)
Terengganu version only used galangal, garlic, turmeric and asam keping

Next time, just get the fish seller or supermarket worker to descale and clean the fish for you. We never do it ourselves 😅

Ichang... for the belacan... use a dry wok and fry until it becomes like dry powder and keep in jar.... the best for samba belacan. Our home recipe... bellman (powder), red chillies + bird eye chilly, lime or calamansi juice, salt, 1 pc of shallot ... all pounded

Adoi kecorrrr air liurrr tengok ikan singgang. Aku chef tpi malas masak.. asal masak sendiri bila tang makan kurang berselera sbb dh penat masak.Tpi bila tengok org masak atau makan makanan org lain masak memang kecor air liur..
