Fun fact about haori (and other Japanese clothes) is that they’re designed to be completely unstitched to be cleaned, so all of the fabric can be flat. (I think having a gap at the underarm is also by design, so you can see a little of the lining there, but I might be mixing my garments up as it’s been a while since I’ve made one)
