I wouldn’t say that it is tourist traps, but they are quite standard and not very personal. I am sure they are all good, but coming to Valencia to eat burgers and risottos seems strange

All tourist traps, nowhere where Valencian people would go.
Just any restaurant from El Palmar island (inside the Albufera, the city lake) with more than 30 restaurants and less than 1000 inhabitants is better than any of your recommendations.
And there are more restaurant zones, such as Gran Via, o Cánovas, Russafa, El Carme, or Cabanyal where the worst is better than any tourist trap.
Ps: For burguers and USA food Jenkings and 100 Burguers have national and international awards and are not mentioned. For Pizzas Il Cortile is also internationally awarded. And no mention to rices in the hometown of Paella Valenciana is almost a crime.
