I will leave my own opinion of how well done are the quality on the sounds and 3D model dividing them in 3 eras, the 90's, the 2000's and the 2010's. 90's:well, the best on both sounds and model goes to Gran Turismo 2, on sounds because of the good sample they used and in model because they were the pioneers on using exact scales and proportions. 2000's: in terms of sounds, NFS UG2, Carbon and Prostreet wins by far for 3 reasons, the sample, the attention to detail (on turbos, deceleration effects, etc) and the transitions between gears and neutral acceleration, but on 3d model, theres 2 great models, NFS because of the attention to the proportions and good quality (used since UG1 all the way to Shift) and GT4 for the same reason of gt2. And in the 2010's, the best sound comes from Grid 2, it was the most decent one, and in models, again, GT5, altough its the same 3d model from gt4 but enhanced, it stills the best one imo.
And in modifications 90's: GT2 basically for having a standard modification system for almost all cars 2000's: NFS because of the huge amount of various modifications from bodykits to even lights and audio systems 2010's: Forza for still having a good modification system and a good paint booth
