Medium rare in my and most people's opinions is the best. It's juicy, still has that flavorful browned outside, tender, perfect. I'd definitely recommend trying it.
Depends on the cut. Ribeye caps do well up to 135F (mediumish) Filet Mignon around 131 or so. Leaner cuts, lower temps for sure. Regular ribeye (not the cap) is good anywhere between 130 and 135, depending on the fat content, more fat, higher temp.
You must've had a fiorentina steak, then. It's so good, isn't it. Here in Italy there's this common sense that every meat under well-done is literally raw. I am so fortunate to have a dad who knew his steaks from the beginning. I have never eaten a steak anywhere past medium, at least that I can remember. My favorite steak is a 1.5" ribeye done medium rare, but I also love inside skirt or tri tip for tacos and such.

Everything has a time of the season for me. Both are good yes but only reason I dont eat well done to often is cause the chewiness is too much for me. But sometimes I get that craving.

Second this, not as popular to say but usually if you cook for a crowd people will love it the best. Especially so with fatty cuts as it lets the fat render.
@omerkeidar95 I used to run an Outback Steakhouse. Yeah fancy...I know. 😢 But when it came to ribeye and prime rib, in 2021 88% of orders were medium rare. Strangly, nearly 50% of fillets were ordered medium. This is a localized percentile coming from the middle of Indiana and I do not know how it was for different districts, but here the majority prefer medium rare. At least people who eat at Outback. To be completely honest, if I attend someone elses bbq without the supervision of someone with food safety training....I will lean toward a more medium steak as I am not a big fan of food born illness. Not saying you're wrong or right about anything. Your comment just made me think about this.

Every type of meat and every cut has its best cooking. For fattier beef cuts I go medium, as the fat has the chance to melt and deliver its aromas into the meat. For leaner beef cuts I go from rare to blue rare. I use well done for beef stew and saucy roasts.
I'm not opposed to any level of doneness. Even well done doesn't have to mean overcooked and bad. That said, I honestly prefer blue rare. If it's not still trying to escape, it's not my favorite.
I switch between eating blue and medium rare, i really like the texture of blue, i just wish it could be warm and still have that particular texture to it

I am so fortunate to have a dad who knew his steaks from the beginning. I have never eaten a steak anywhere past medium, at least that I can remember. My favorite steak is a 1.5" ribeye done medium rare, but I also love inside skirt or tri tip for tacos and such.

Am I the only one who enjoys both rare and well done? Yea they taste different both are really good. I think if you don’t like well done you might just be following the trend to hate well done. I prefer medium rare most though.

I’ve never been a fan of well done steak unless it’s a stir fry and even then med rare is the way to go, it doesn’t have as much juice and is much tougher to chew, my roommate whom I’ve lived with for 12 years now however can only eat well done cause he hates the thought of blood, and I’ve tried his steaks and I will say if you have a good cut and butter baste like no tomorrow it can have some solid juiciness and tenderness

Everything has a time of the season for me. Both are good yes but only reason I dont eat well done to often is cause the chewiness is too much for me. But sometimes I get that craving.

Second this, not as popular to say but usually if you cook for a crowd people will love it the best. Especially so with fatty cuts as it lets the fat render.

@omerkeidar95 I used to run an Outback Steakhouse. Yeah fancy...I know. 😢 But when it came to ribeye and prime rib, in 2021 88% of orders were medium rare. Strangly, nearly 50% of fillets were ordered medium. This is a localized percentile coming from the middle of Indiana and I do not know how it was for different districts, but here the majority prefer medium rare. At least people who eat at Outback. To be completely honest, if I attend someone elses bbq without the supervision of someone with food safety training....I will lean toward a more medium steak as I am not a big fan of food born illness. Not saying you're wrong or right about anything. Your comment just made me think about this.

when I was a little kid I was at a restaurant with my family and my grandpa ordered a medium rare steak so I just did the same and I’ve been ordering medium rare ever since
Lol same exact thing for me but my grandma. It was like a light turned on that I never knew was there.
Every type of meat and every cut has its best cooking. For fattier beef cuts I go medium, as the fat has the chance to melt and deliver its aromas into the meat. For leaner beef cuts I go from rare to blue rare. I use well done for beef stew and saucy roasts.
