  • Follow me on my weight loss journey and see what I eat in a day on a vegan low fat high carb plant based diet. I follow Dr. McDougall's Starch Solution and Maximum weight loss plans including 50/50 plate whenever I can.
    In this week's video, I show you two delicious meals suitable for weight loss: Mushroom, potato & tofu soup, and Pumpkin & red pepper pasta with tofu. These meals are low fat but will keep you full and satisfied as they are full of fibre and goodness.

    Mushroom & potato soup (serves 3 - 4):
    1/2 onion
    50g dry mushrooms
    200g potato
    300g mushrooms
    1/2 tsp all purpose seasoning
    5 cloves of garlic
    Thyme
    1/2 pack of blended silken tofu
    1/2 stock cube
    Parsley
    Salt, pepper
    Pumpkin & red pepper pasta sauce (serves 2 - 3):
    1/2 onion squash
    1 red pepper
    1/2 tsp cumin
    1 tsp garlic powder
    1 tsp smoked paprika
    Salt per taste
    1/3 pack of tofu
    1 tsp garlic powder
    1/2 tsp oregano
    1 tsp nutritional yeast
    1/2 tsp all purpose seasoning
    1 tbs lemon juice
    1/3 cup of plant milk
    1/2 tsp thyme

    No need to apologize Nina! I adore jam that’s better suited to a spoon than knife. ❤ This all looks delicious too. I might add a splash of the starchy pasta cooking water to the sauce but that’s just personal preference. 😊 The best part about this way of eating is that you don’t have to worry about dairy adding more congestion.

      You are right Chelsee. Starchy water would be perfect. I will try that next time. And I totally agree, no need for adding dairy to the food like everyone seems to do. Hope you have a great week ❤️
