Stuffed Broccoli Leaves

Do you think it's weird to eat broccoli leaves, it's not. The broad outer leaves of the broccoli plant are edible and delicious.
Most people don't realize that you can eat broccoli leaves that they are edible and delicious as the broccoli head itself.
Today's recipe is Stuffed Broccoli Leaves. I hope you enjoy it, and try planting some broccoli in your vegetable garden as well.
The leaves are considered super food, with even higher amounts of beta carotene. It contains Vitamin A,C,B, Potassium, Iron and Calcium.
After washing the leaves soak in hot water for 3 minutes and drain well.
Prepare the filling. Diced tomatoes, parsley rice and cooked chickpeas.
Add salt, cinnamon, black pepper, lemon and oil.
Mix well and add to the leaves and roll.
Put the pan on medium heat. Add oil, one onion cut into rinds. Arrange the stuffed leaves. Press a plate over the leaves and cover with water. Bring to a boil then simmer for one hour.
Enjoy while still warm.
Ingredients:
Broccoli leaves
1 cup diced tomatoes
1 cup diced parsley
1 cup rice
1 cup cooked chick peas
1 tsp salt
1 tsp cinnamon
1/2 tsp black pepper
1 tbsp olive oil
1 tsp sammac
1 tsp dried mint
1 onion cut into rinds
1 lemon

We recently started growing broccoli in a raised bed and were wondering how the few florets would make it practical to use as a staple vegetable. After finding out even broccoli flowers are edible, we eat the leaves and the florets are a bonus. This is a wonderful veggie recipe, thank you for uploadng it
