Learning How To Cook Broccoli Leaves

  • After several people mentioned cooking the leaves from my broccoli, I decided it was time to learn how to do it. I found a recipe right here.. www.cubemarketp... I modified it a little bit, cutting back on the garlic and added some hot pepper. I made plenty of mistakes, used the wrong pan, had the heat too high, should have used tongs instead of a heat resistant spatula, etc. In spite of all that, the broccoli leaves were quite good. And if I could get them to taste halfway decent, I'm sure you could do much, MUCH better !

    Yo, this guy is funny! I just came across some of those for the first time today, and I'm about to make em right now for my Thanksgiving dinner. I'll add smoked turkey necks for flavor like I normally do with collard greens. Thanks dude.

    Great video! See? Next time you'll know exactly how to do it from the outset, I know you will use a deeper pot next time so you can turn them easier. The first time is always harder. The coordinator of the gleaning association I volunteer with, told me the story of her great-grandparents and their broccoli here in North Carolina. Apparently they grew their broccoli for the leaves and they gave the broccoli flowers to their hired hands and house help. That is turning an idea on its head for sure. Since then I have been growing broccoli for all of its parts. I give the leaves a quick blanching, just boil for three minutes, drain and put into freezer bags for my pot greens. I will add those frozen broccoli leaves to any soup, rice, scrambled eggs or omelette, stirfry, or add it to yellow squash for some color.

    I sure was glad to see you included a glass of iced tea with that wonderful meal. Without iced tea, it would be like a car without wheels. Please talk your wife into doing some videos with you. Behind every great man is a great woman. I would love to see some of her cooking. Thanks for sharing. I have, once again, been inspired.

    Thanks for the video! Eating them right now! LOL Yup, pulled the leaves off the stem. The stem is too tough to eat. Rolled up the leaves into a burrito and cut them cross-sectionally. Stir fried in large skillet/pan with oil & garlic for about 3-4 minutes, add water (or soup stock), close the cover and cook for another 7 minutes. Some salt and that's it! I grew mine in the garden & I picked the younger leaves.

    This is a very good recipe, my only feedback is it is much easier to rid yourself of the stalks by simply running your hands up them and collecting the leaves. I also find it easier to roll the leaves like a taco and slicing them up that way. Had no garlic so sauteed the onions with some high quality bacon. Post more videos, you are highly entertaining and informative!

    I was just thinking that them greens would be real good with about 4-5 slices of bacon diced up and fried too. There is just something about the smell of bacon and onions cooking togeather that just can't be beat. Never thought about cooking the big broc leaves till I saw this video...glad I didn't yank the plant yet. Gonna try this recipe of yours tommorrow.

    YESSSS loved Justin Wilson!!! That sounds soooo good. I always take collards and get the largest leaf and put it on the bottom and pile some more on top of it stems all the same direction. Then I roll it up nice and tight and then cut in half and then slice it very very thin.

    Well, the only thing missing were the shrimp! Guess I'm a different kind of gardener, that was a lot of time and effort when you could have just picked and eaten in the moment. I have a hard time getting enough broccoli back to the house as I'm eating all the time I'm out there.
    You did a great job! You could have reduced the leaves in the microwave and then tossed them in the skillet.

  • @melodybarlow7815

    Your broccoli plants are beautiful. I usually slice up the stalk part into small pieces and cook it in the pan first, until they are fork tender. They are actually sweeter than the leaf once they get cooked a little. Then once the stem pieces are approaching tender, then I add in the leaves.

  • @daemickey
    @daemickey 12 лет назад

    Hi Mr Bobby,I tried it your way but my leaves were still tuff so i added more chicken stock and let it simmer on low flame for 2 more hours with five bacon strips and MAAAAAAN! It was so tender and still had a crunch to em. Give that a try Mr B and all of you who may have had the same problem.

    Wow it looked really good! Great job! I would have put them in a large pot of water just filled to cover the leaves then added for flavor some left over about a 1/4 pounds of ham or left over cooked chicken chopped up, chopped onion, chopped garlic, hot chopped pepper, two peeled chopped potatoes and 1/4 tsp salt or to taste brought it all to a boil then turned down low and simmered for 45 minutes to1 hour till the leaves were tender and my my my that would be so good with any other sides :D THX

    I really enjoyed your recipe a quick tasty way to cook the leaves! Thanks so much for sharing! I think it really sliced thin strips the leaves would make a great coleslaw with onion, shredded carrots, dressing: mayo, white vinegar and 1/4 tsp of sugar or even make a great a toss salad with tomatoes, celery and radishes. Enjoyed this video so much thanks. You were very creative and entertaining to watch how your dish came out! Bravo to you and a GOLD STAR for effort and creativity! *
