    During the Second World War, a lot of our parents, grand-parents, great-grandparents had to simply make do with a little less. Certain items were short due to difficulties in transportation, or rationed to make them last as long as possible. Getting troops on the front lines enough to eat was vital for the war effort, and as a result, folks on the home front often had to make sacrifices.
    This recipe is for War Cake, an authentic WW1 & WW2 dessert recipe. It may seem lack-lustre at first glance, but the taste was really great!

    They had to save back ingredients to make this cake over a long period of time. Cakes were a special treat.

    I have made this 5 times. Vary the recipe each time. The original recipe the 1 tsp of clove is too strong. I cut it back to 1/4 tsp. The batch I made today was the best. I used light brown sugar, 1 1/2 cups, 1 tablespoon of molasses, 1/2 Granny Smith apple, chopped, 1 large carrot, shredded, raisins, chopped dates, dried cherries, 1 dried fig, 1/2 cup of whole wheat flout, 1/2 cup rolled oats,
    3 tablespoons butter, 1 tsp cinnamon, 1 tsp allspice, clove 1/4 tsp, 1 1/2 tsp baking soda, 1 tsp baking powder, 1 tsp salt and the 2 cups of flour and 2 cups water. Boiled all the spices, fruit and water for 5 minutes. Cooled and then add the flour mixture with baking soda, and baking powder. Mixed and put in 9x9 inch pan, baked at 320F for 50 minutes, turned off the heat and kept the pan in the over for an additional 20 minutes. Took out and cooled. The apple and carrot add sweetness and moisture. We have found that store bought cream cheese frosting compliments the spice cake. This has become my wife's favorite cake. With all the spices it makes the kitchen smell like the holidays. My neighbors come instantly when I text that I have a War Cake ready. Note: Baking at 320F keeps the sides touching the pan from burning or getting too dark. Great cake for the beginner. Now our favorite. It lends itself to adding anything you have in the pantry.

    So heart warming. The presentation is 'excellent! I'm baking one with our family recipe from
    East coast Canadians. It is a bit vague and challenging. They passed away but I still want
    to keep the tradition for christmas. Thank you for this. Merry Christmas!

    2 cups of sugar? That is literally two entire weeks worth of sugar ration for one person. I suppose if you had six people in your family it might be “saved” for a birthday or something, otherwise😮. Delicious, yes, but not ration book savvy.
