      Luis Zecena it’s inside jokes for people who know a little more about pour overs. For example, it is very well known in the pour over coffee community to grind your beans just before brewing. Mat grinds his beans at the grocery store (he now uses a Baratza Encore to grind at home) which causes the beans to lose over half it aroma after 15 minutes, and lose most of its CO2 in 60 seconds. This pisses off the barista because he takes coffee very seriously while Mat doesn’t.
      It’s really funny if you are into pour overs or specialty coffee.

    Ah, now I understand what's been missing from my coffee routine. Thanks to this video I went out and bought a Keurig and now I put a K-cup in it and place it into the trash every day. At night I remove it from the trash and throw away the K-cup so I can start the process all over again the next day. My coffee's never tasted better!

    How to make coffee
    1. take ground coffee and throw it in the trash

      If you have a vitamix blender you can use it to grind coffee. It's not as ideal as a manual burr grinder since the blade from any grinder will produce heat onto the beans- but it's still better than already ground coffee that's been in your pantry for days. If you're too busy to enjoy this every day- just get the whole beans at the store- have them grind only SOME of the bag of beans you're buying (enough for the week assuming you shop weekly). This way you have your already ground coffee for most of the week when you have less time, but still have some whole beans for yourself to grind on the weekends or during times when you can relax and sip a better tasting cup of coffee.

    Ok there is just one thing I want to share: James Hoffman did the coffee temperature experiment and discovered is basically impossible to brew coffee at too high a heat except in a brewer that heats it's own water ( espresso, coffee machine, ect... ) and even then over heating is mostly theoretical and basically never happens. If you brew with boiling water and it tastes "hollow" or something, the problem is not that you brewed too hot - the problem is you're drinking it too hot! Let it cool and you will discover an incredible world of taste. You can tell me I'm wrong, but that just means you've never tested it. 👍😁

      it depends on the roast level; darker roasts are better suited with cooler water and vice versa (Hoffmann made a video about that too).

      Correct. This was tested by me extensively with a pour over flask/decanter.
      Let the coffee cool to taste coffee flavours. It’s our tongues not the maker.

    1. The thicker layer of filter goes on the side where the pourer is.

    LOL. This was hilarious. Over the last decade I've tried to love coffee and be one of the cool kids. I just can't do it. Even with a ton of cream and sugar I just don't like the taste. So I guess I'm just stuck being Team Tea for life.

    I make coffee in exactly the same way, but I add one step. I warm up the cup and the coffee maker first with hot water. If I don't, the coffee become too lukewarm for my taste because it takes 2-3 minutes to completely drip through. Grtz, Vera from Simple Happy Zen

    I love that a RUclipsr like Matt is into coffee like this. I've worked in the coffee industry for the past four years thanks making my first pour over the year before, so seeing such an artful video all about coffee but NOT made by someone in the biz is refreshing.     I use my Chemex every day in the office. Saved a lot of money on not buying coffee outside and it tastes so much better. Love your video's and podcasts, Matt. Keep it up.

    Dude, I love your videos so much. I've gotten so much inspiration watching them. There's this quality that over exceeds the audio/visual that is the intention you put to things and how you translate it into actual content. It's magical, I love it so much. Making coffee can be about getting the best taste but for me it is much more about having that moment experiencing life and little things, making things with care and intention.

    My best friend got me into specialty coffee about two years ago now, after I drank my first V60 and told him I was actually into this, he sent me this video, I always found it super fun because essentially I was Matt and my friend was the barista, 4 months ago I got my Chemex, after a ton of searching for "my own" method, right now, where we stand, I transformed into the barista so this video holds a very special place in my heart, it is the start and the present of my coffee journey and I'll be forever grateful for that, Thanks Matt, you're a beast!

    Best coffee tutorial ever!
    So many baristas have brewing tutorials that are flawed one way or the other while claiming to teach you to make the perfect cup of coffee.

    I've found as a barista that making pour overs is so peaceful that I want to continue to when I leave for college. I'm buying all the supplies to make my own pour overs in my dorm 😂😂 it's a lot more work than a Keurig or a mini drip brew but to me the practice, the ability to destress at the end of a day or start my day right is sooo worth it.

    I have to say I've just discovered your channel and I am very impressed by the photography of every scene and the minimalistic color tones. As a design student, I've noticed that I focus on every detail now of everything I see and the audio-visual of these videos are on point.       If you like it, use it. To my experience paper filters are a bit less strong than French Press.

    Great video. Already did most if your tips, and still learned a few new ones too. I like Alton Brown's tip about the boiling water...he offers to simply remove from heat and wait 10-seconds for perfect temp. Thanks for your video!

      I'm Italian too and moka is a shit. Why? Because you bring to a boil the water and you kill the coffee. The Real Coffee is done like this, just pouring water onto it

    I enjoy using a pour over with a fine mesh metal filter. I never have to worry about buying paper filters. It takes me several weeks to go through a bag of coffee since I usually make 1 cup for myself. For that reason I invested in a burr grinder and grind fresh every morning. Once the water comes to a boil I pour the water into my cup (to warm it) and grind the coffee. Coffee goes into the pour over, water gets dumped, and by then the water is a perfect temp. I bloom, then pour over. As you mentioned Matt, it is important to not hit the sides as it just waters down the cup. I enjoy making this cup daily and over time the muscle memory I have developed allows me to make the same cup with high quality every day without the use of scales and thermometers. Very zen! The only downside to this method is that the metal filter allows more grounds to enter the cup than a paper filter. Because of this I compensate by using a coarse grind and 3 scoops of coffee. Additionally, I usually toss the last swallow of coffee since its usually cold and filled with grounds anyway. Typically the grounds settle to the bottom and don't ruin the rest of the cup.

    Congratulations, Matt. I didn't realize until I was in my 60s that grinding the beans didn't make that much of a difference. But I moved to a smaller place, one with less counter space, so the mess of grinding beans just had to go. Maybe my taste buds have become less sensitive over the years, but I really can't tell the difference.
    I mostly drink Peet's Sumatra, but a new Italian restaurant opened near me, DiAnoia's Eatery in Pittsburgh, PA, and their coffee is some of the best I've ever had.
    I use a Melitta single-cup pourover, BTW.

    FINALLY!
    Chemex is one of the best alternative brewing method. I love it so much!
    BUT you're doing one thing wrong :D Put your filter in chemed this way: 3 layers where the spout is and 1 layer on the other side. It provides better water flow.

    Try this genius: add coffee powder + sugar into coffee mug. Heat milk but don't boil. Mix 2-3 teaspoon of that hot milk into the mixture inside the mug. Mix well till it's a paste . Finally, add the rest of the milk to the mug from a certain height say 10 cm to the mug mixture.. : that's method one for a good coffee, simple and sweet. If you like this method I can give method two, that's more awesome

    When my nespresso broke down I replace it with an aeropress and noticed the same. Making coffee can be a mindfulness experience. But we are prone to forget about the process and prefer faster solutions that give us more time to waste.
    I'm really convinced of those five minutes I spend in the morning are well invested.

    Preground coffee? No thermometer? Not measuring water? Might as well use a keurig....

      assuming quality beans nothing wrong with preground if it isnt past the normal use date. IME, after opening bag it lasts at least 3 days in airtight container.

    I've grown to love your podcast and channel over the past few months of being a subscriber. I dig your shorts that you do. Their a joy to watch when i have a few minutes to kill. What inspired this video? However, i am glad you made this. I've been curious about your coffee process being a coffee lover myself. Thanks for the great content.

      @@hxcjoshua1 not you should drink straight. you should try a few different coffees from your local specialty cafe black and see if you like it. you might be surprised. If not go back to milk, cream, sugar etc

      Although there isn't just one right answer, I'd say minimalism isn't about living with zero stuff, it's about being mindful of the things one owns (and the reason for purchasing/keeping them), resulting in only living with items that enhance one's life and bring genuine long term joy :)

    I feel the same way about the time it takes to make coffee in a Chemex! I use it as a way to get my mind active first thing in the morning.

    I personally love my Chemex and the wonderful cup of coffee that it always delivers. And I loved that note at the end about tipping your barista!
