Also, pro tip: If you're rolling out chocolate doughs, use cocoa powder when you'd use flour. This keeps the color of the scone chocolatey and adds additional chocolate flavor to your scone.
I work in a cafe that sells scones and soooo many people pronounce it wrong!! So thank you for saying it the right way 🙌🙌 it bothers me as much as someone calling espresso, expresso 😂
Why you warm the milk: Warming the milk opens up the lactose, the natural sugar of the milk, adding both sweetness and richness to final product. This is especially important in making cream of celeriac, a mildly sweet sauce made with milk and celery root, which is bitter. The same principle can be used to make ginseng less bitter and more palatable.
@@sarangeonew We're talking about warm milk, not hot milk. So long as it doesn't make the butter melt out before the dough hits the oven, you're fine. That's the nature of pastry breads, they can take some bending of classic pastry rules. Now, if we were talking about pie crust or some other pastry that gets rolled really thin, then yes, you'd have a point, because any warmth in there would cause the pastry to be more tough, less tender.
I don’t totally agree with you. Warm milk can make the smaller pieces melt, it doesn’t ned to be pipping hot to melt the butter, since butter melts at 28c. Sure, you can use it warm and your scones will be fine, but they will be better if everything is cold. It’s just my advice, then each person will do as they like 🙂
My dog did as well. The last few days of her life, she was much more clingy and affectionate than normal. It was very sudden. She woke up, heavy panting through the day, coughing, and passed away that night. I couldn't get her to the vet. She wasn't eating or drinking. As long as Amy is eating and drinking, going to the restroom as normal, breathing fine, she's probably okay.
Definitely happens with older dogs. I found that CBD oil really helps perk them up. Our Weimaraner was on his last leg, wouldn't eat, couldn't get up to go potty, it got him up and gave him almost another year of life.
"Boss, I think we've done it! I think we've made the perfect burger!" "Yeah, mate, it's good, but... What if we made it GIANT?" Who would work better as D-Pug?
No idea whether your reading comments from this video still! - I've never had scones before and when I saw you made chocolate ones, I had to try it! I made 15! And they are YUMMY!! Still got some left and only made them yesterday! I WILL be making them again 👏👌
Hmm, this has given me some inspiration to try this but maybe some how making it like a black forest gateau topping or maybe just some glace cherries in the dough...
Barry, I did 3 years of animal science and care in college, worked at a doggy day care for 3 years and was a dog walker for 4, so I know a lil bit Please keep an eye on Amy, sometimes dogs can just change, also due to your move, a change in environment really does affect a dog also, but the reason I am a lil apprehensive about it is for a slightly worse reason, dogs are shockingly aware of many things, their body being one of those, and I have seen/experienced it many times where a dog developed a serious health issue that wasn't noticeable by humans and this change in behaviour was caused by this underlying health issue, so just keep an eye on her okay?
I was going to say just this, not a bad idea to take her in to the vet if you can, just to make sure. She also just might be getting older, not sure how old she is, but a lot of pets seem to become more affectionate as they get older.
It's currently 1:05am in Australia, and I should be asleep, but if Barry uploads, Im compelled to watch. Also, he looks more like a Baz than a Barry but that might be the Aussie in me.
Going to try these. I find with scones its best to not use that much flour when rolling it out, it will dry out your dough a bit too much. Also use the straight side to cut as its a cleaner cut and again will aide with a much bigger rise. These look delicious
So I saw this video last night, (Big fan Barry!) And I have just made these and popped them in the oven, they smell amazing!! Can't wait to sit down with a cuppa later and try one or two! Thank you Barry, keep up the good work in inspiring us to cook more!
I've been laid up since the weekend with an infected abscess and haven't been feeling too well as a result. Watching this video has just restored my appetite. Thanks, Barry. Now all I need is someone to come make some scones for me. Maybe I could train the cat? 😋
So, I'm pretty new to the channel. I here from the Barshens overspill, and of course lockdown baking. I have been really enjoying what you do. And this video, and the way you pronounce the word scone. And I now I love your videos. Keep them coming 👍

I don't know what Mrs B thinks, but I think the buzzed hair looks really good. 35 or so years ago I was at Chocolate World in Hershey Pennsylvania, and had chocolate toast. It didn't have chocolate chips in it, and it didn't have chocolate on top, it was chocolate flavored bread (not particularly sweet), toasted, with butter on it. It was utterly amazing, as you can tell if I remember if from 35 years ago. You might see if you can find a recipe for that.
These look so good! Tip for the butter in future, try grating it, like you would cheese. Then you just toss it around in the flour before adding the wet ingredients. I can't wait for Sunday (my baking day). Thank you so much for this!
Hay barry loving the new hair cut love the video mate cant wait to try these yummy p.s i use the pastry cutter all the time working my butter into my flour
Another great vid, Barry 👍 Quick tip to check if your pastry’s done, stick it with a cooking needle - if there’s pastry stuck to it, it isn’t done yet 😊

We have scones in America, they're not biscuits! We just describe them as savory biscuits because it's the closest thing to what you can find there. Biscuits are lighter than scones, almost always savory, and impossibly flaky and short. I'd love to see your attempt!
Never heard of scones before but it looks and sounds delicious. The way they're prepared reminds very much of buttermilk biscuits (mainly a southern US thing I think)

ALWAYS use a pastry cutter. They are cheap, but they help keep your mixture cool, warm hands warms and can melt your butter, incredibly important in most baking. But where did you get yours? I love the spot for the thumb!
As someone from the southern US, biscuits are normally a savory affair. I would call these scones too. Would love to see you do some southern US recipes!
Barry Lewis biscuits and gravy is a favorite breakfast! And would actually be easy to do right now with limited ingredients. Chicken fried steak is a great one. On New Year’s Day we always have collard greens, black eyed peas, corn bread and pork for good luck. I’m not sure if you eat banana pudding in England but I love it for a desert. Pimento cheese is a great snack food to eat with crackers or on white bread. I have plenty of other suggestions if those don’t work for you!
I know a lot about cat behavior so I can only give you some general insight from that perspective. My cat also has a very close bond to me (hard to believe but I feel she’s secretly a dog) and she will jump on my lap and not leave for 30+ minutes sometimes. That just means like Amy, I can only presume, is growing in her attachment to you. Btw, great video love love chocolate scones! I tried them once.
American biscuits are light, fluffy, and crumbly. They often have layers that can easily be separated by hand for easy halving with a buttery, salty flavor. Often paired with both sweet and savory breakfast items depending on your mood, either used in egg/sausage sandwiches (All our fast food offers them standard) or spread with jam or honey. In the southern US especially they feature prominently in nearly every breakfast platter and are even sometimes smothered with cream gravy in the aptly named dish "biscuits and gravy." Your scones seem a little more cake-like in texture than american biscuits, biscuits are probably closer to pie crust in consistency. You should try making some, don't personally know a recipe but should be easy to find! I suggest sausage (Or ham or bacon), egg and cheese sandwiches; biscuits and gravy; and honey/jam biscuits. A smorgasbord of american biscuit snacks/meals.
@Barry Lewis: Warming the milk is probably done to bloom the cocoa. This would work even better if you mix in the cocoa in the hot milk and stir it well and then add it to the batter.
Warm milk + a teaspoon of lemon juice, wait 30 seconds and add to mix, the acid sours the milk a bit , with the warmth and the acid it activates the baking powder and the scones rise better.
Berry it would be cool if you made it flour cutter that went all the way around your hand with a protective cover preventing your hand from touching the butter. That way you don't heat to butter up

when you said it doesnt matter whether the jam or cream goes first, it does matter!
and it is pronounced scone not scoane
Lol the other day I asked my parents why aren’t chocolate scones a thing literally 2 days later:
Barry did you know in the lid of the nutella pot there is a tool to open that golden seal on top of the jar(underneath the white part in the lid)
