Smoked Gouda seems like it would work very well with a BBQ pizza. BBQ sauce, chicken, bacon, steak & onion as the toppings with plenty of delicious cheese.
I tried every type of cheese for pizza possible from the deli slab to already shredded Kraft. One day in Sam's I noticed this 5 lb. bag of already shredded mozzarella. For $15 I gave it a chance. Well, by far, this was the best cheese for pizza I had ever used. It stayed gooey and melty after the pizza cooled and did not get hard. Go Figure! cheese

I put on my ultimate pizza: Provolone (sliced) Gruyere Asiago Parmesan Robiola/Taleggio (which ever the supermarket has in stock) and lastly Fresh Mozzarella Then for meats, I put Bacon and Bresaola and topped it all off with cracked peper and a small drizzle of olive oil. Absolutely DIVINE!
I like that you make suggestions, don't like that you make proclamations that someone would be wrong to use cheese in a certain way! There are many different tastes out here NEVER make the mistake that your way is the only correct way when it comes to food!

Pecorino Romano and Parmesan Reggiano are quite different and should NOT be considered a "cheap substitution" for parm. While slightly related, they have different flavor profiles and different use cases. Honestly lost some respect for Mashed here as clearly they haven't done research on this. And this is sad for me because I've been a long time watcher of the channel
Actually placing certain American cheese around near the crust helps & somewhat adds sweetness depending on brand but not for everyone. But if a cheese smells bad before you cook it it’s going to smell worse cooked usually

I have also had Monterey Jack Pepper Jack And shredded cheddar with excellent results
