I wonder if you have experimented in doing an ice cream that has both fruit and vegetables? My 86 y.o. mom is diabetic and having that mix is better for her.

1 cup baked and peeled Japanese Red or Hannah sweet potato, 1 cup plant based milk, 2 mejool dates, 1 tablespoon oat flour, 1 tablespoon cashews, 1 teaspoon vanilla extract. Blend well. Pour up to max line. Can add more sweet potato if needed. Use immersion blender to combine right in the container. Can add 2 tablespoons cocoa for chocolate! Okinawan sweet potatoes are good too!
I only got mine three days ago and I think there is a learning curve. It will all be worth it for an ice cream fiend like me. But Kathy has given me so much courage to experiment. Thanks!
