  • Brisket, cooked to perfection in our Blodgett Combi oven. We utilize the overnight cook and hold feature on our BLCT61 touch screen controller. This will cook the brisket to perfection then hold it at 195 degree until we return after a good nights sleep! No supervision required, the only way to do it.
