Now that I'm retired from all that I'm flying Merlins and KIng Airs, and we cruise in the low to mid twenties. It's consistently smoother and there's much less traffic - almost none at all.

Well the majority don't give a jot about the busy highway being played out above their heads. Perhaps they should.
Water vapour is one of the main products from an engine exhaust. The increase in water vapour in the air created by the engine can raise the humidity of the air past saturation point (the point where it cannot hold any more water). Due to the cold temperatures at high altitudes it condenses into tiny water droplets/ice crystals (like when you get water form on cold windows in winter), which is the visible white stuff you can see. Look at 48 seconds. Cloud helps us see how fast these go. If its filed with plain background it just feel like nothing is moving.
