You're really feeding my fantasy of moving to the semi-countryside of Japan. I definitely have to get back to Kagoshima. Everything looks so pretty. One thing I need from someone is a nice hazy summer video with someone yelling into the microphone over all the cicadas and other insanely loud insects to remind me what living there was like during the summer. Old dudes with tank tops and haramaki with a towel around their necks, maybe even swatting away some mosquitoes. :) I'm guessing that Kagoshima is fairly hot in the summer, as it was hot when I visited in October. Have you looked into the craft beer breweries in the area? The tiny brewery in the basement of the Shiroyama Hotel was one of the better breweries I went to.
We love craft beer as well and there are a few places brewing here now. Shiroyama as you mention is probably the best known and the quality of beer is very good. Summer in Kagoshima is hot, but it does have that unique vibe you describe. The cicadas are already chirping here so a sign of hot days to come. Will have to sit down with shochu on the rocks to cool down!
I wonder if I can find some of his shochu here, i know shochu is still a niche in Montreal, but I tried some before and quite liked it. I could definitely go for a cup right now though!
Manzen might be a little hard to find, but if you can get hold of it it’s certainly worth the search! Kagoshima has over 2,000 varieties of Shochu so hopefully at least a few are available in Montreal!
Aaaahhh! I visited his distillery in Haleiwa back home! He makes Imo Shochu too

I love Manzen shochu. I have two bottles that I received when I lived in Kagoshima. I hope to visit the distillery someday.
