Scallops are great in this as a side dish next to broiled lobster. Saffron is a bit pricey but so worth it. I use it in a rue for a cream sauce most of the time. A friend of mine works for the Moroccan Consulate at the U.N. and I get my saffron stash through her. She gets the good stuff. I never tried using it before we met. She makes great dishes with it and showed me the best way to use it. You used waaaay too much for the amount of risotto that you made.

Yep ! Fake saffron ! That’s what a Moroccan guy warned me about a decade ago when he saw I was looking for this spice at a market in Montreal🇨🇦! Always be sure to buy the real stuff 😅

Nahhhh! they say if you got a love for food to what you cook, just do it, no matter what. The love of cooking and sharing it, is the main joy of just sharing the love for the food, you cook. 👌 👍
I would sear my lobster, then remove it from the pot, then add the butter and oil and rice. Then I would use shrimp stock instead of chicken! So I would give you a 7 out of 10. 🤣

Just made it tonight and wow! Although I did do a couple different things, first things first I used chicken stock instead of chicken broth which is not that big of a deal but I used smoked salt to give it some extra flavor. Really brought it out.

I've found there is a huge difference in texture, and somewhat flavor between what I make at home, a good restaurant and a top restaurant. Had risotto many times but the risotto with shaved white truffle I had at a 2 Michelin star restaurant recently was a completely different experience. The texture and flavor was just miles above any other risotto I've ever had.

Saffron is a great ingredient, but if you use too much it has a perfumed taste that can ruin the dish. It’s great in some mashed potato to serve with chicken or fish, a paella isnt a paella without saffron.I’ve recently got a recipe for a Moroccan chicken and vegetable tagline, that uses saffron , not tried that yet

the reason this is difficult in fine dining (top 100 restos canada cook here) is because its normally done on extremely high heat with very vigorous and consistant stirring, its a lot of moving parts coming together very quickly that makes it difficult

Your version sounds and looks delicious, but it should be said that traditional risotto can be made without the butter and still be creamy and kept al dente. The adding of broth and yes, lots of stirring, releases the starch from the rice (not necessarily making it mushy), and the stirring the rice, broth and starch is like an emulsification, giving you that creaminess.

this actually works! one of my best gf's, for our first date, i had her over to my place, and made her fried rice and something else. she watched in awe as i made it all. i got laid on my first date with her, and we were off to the races! she loved it when i cooked, cuz i made some weird shit sometimes, and she like riding on my bmw motorcycle with me.

Notice how the lobster shells turn red once they’re cooked. Notice how they weren’t red before adding to the pot? Which means the tails were torn from the body of the lobsters before the crustacean’s were well, you know… hmm? What’s the better fate to be boiled to death or torn in two while still alive? Poor things were drawn and quartered… err, halved. Love them either way just keeping it real.
