  • Honey and Soy Smoked Salmon on the Kamado Joe Classic
    This is a simple smoked salmon recipe on the Kamado Joe Classic.
    Prep time is about 15 minutes, and cook time is about 1hour depending on your temperature.
    We used 1.5 pound Copper River Salmon filet.
    Our easy recipe:
    Ingredients:
    For the Dry Brine
    1.5 lb- salmon filet (skin on)
    3/4 cup- brown sugar
    2 TBSP- flaky sea salt
    1 TBSP- coarse black pepper
    Method:
    Mix the brown sugar, salt and pepper and blend well.
    Coat the salmon with the sugar mixture, completely coating all of the flesh.
    Refrigerate for at least 2 hours covered.
    Remove the brine by rinsing in cold water and pat dry with paper towels.
    Set your smoker at 200 degrees. In our case we adjusted the Kamado Joe with the bottom vent at 1 inch, the top vent closed and the daisy wheel almost closed.
    Adjust the vents on the Kamado Joe until you reach the desired temperature.
    Baste with honey soy sauce and cook to 140 degrees.
    Add cracked pepper if desired.
    Honey Soy Recipe:
    1/2 cup- Unfiltered honey
    1/4 cup- li;ght soy sauce
    1 TBSP- lemon zest

    When did you add additional black pepper. I thought you rinsed the fish before smoking?

    How long was your cook time on this?

      The smoker was set at 200F and cooked until 140 internal. Depending on your smoker. 😊
