Next time. Try using a basil parley pesto as a baste with melted butter as the delivery and adhering component. The extra greenery gives it a really nice flavor.

Looking good John, must try this although I'm sure we don't get sea bass fillets that size in the UK. Back in the old MCM days, you had some cedar planked burger recipes - would be good to get a remaster of them for this channel :-)

Looks darn good!!! How would it turn out if instead of moving the plank indirect, moving the plank up to the upper level but on the direct side? - I'd think it'd cook quicker and be smokier or would it dry out the edges too much before the middle of the fish was cooked?
