    I sometimes let white tea simmer for 10-15 minutes after I'm done with the gong fu session. I haven't tried it with Bai Mu Dan yet but it works quite nicely with White Moonlight or aged Shou Mei. White is also my go to grandpa style tea that I drink at work because it won't get bitter (if it's good quality).

      I tried it with high quality tea silver needle of guangxi but IT was so bitter whats the catch to do it right ?

    Thanks so much, I've recently gotten into tea for my caffeine source and really like drinking some aged shou mei all day at work but have only been using the gong fu method. Thanks for the tips I'll definitely be trying these!

    That was very interesting, Gabriele, thank you! I've never heard of boiling white tea. I guess you could do this at home fairly easily with some kind of brazier/tealight and use one of those borosilicate teapots with filter. But a nice big calderone would look so much better!

      Boiling tea is indeed not much known in the western world. It became relatively popular in China, at least among tea freaks, but for some reasons this trend didn't made it to America and Europe. Try it out and let us know what you think about it.

    My gf once tried out gongfu brewing but didnt manage to get a good brew so i gave her my 10yo shou mei as next tea to try. Its basicly impossible to get this tea bitter or too strong

    Thank you mich for explain how is boiling white tea working i tried it twice but it was so bitter, but i guess its as you said, dont boil for long and not strong

    I enjoy Gongfu as a meditative addition to either smoking a pipe or spending time with my wife, but most of the time I just like to brew a pot. Different teas for different purposes, like my 2010 White cake is pretty much reserved for Gongfu, but even that started out as a working class tradition, so never let yourself get too caught up in the rituals or the "glamour" to just simply enjoy your cup😊

    Really like uniqe methods for earch tea like whisking matcha, gfc for oolong and puerh, grandpa tea for green so boiled tea for white is the next.

      I rinse white tea only when aged.

      @@nannuoshan thank you for the reply. I suppose I need understanding of the rational for rinsing. Is it too open the leaves? I though it was too remove dust, awaken the leaves, get the bitter steep out of the way, and I've heard to "own the leaves" as though it reveals more flavor. What would you say is the reasoning for rinses? Do different types of tea need different times or temperatures? How do you tell how to treat each type?

    Hey, I really enjoy your videos. I want to start my own tea ceremonies and already selected teapots and cups on your website. But the problem is the tea. In your beginners tea tasting guide you recommended to start with white tea and specificly named Bai Mudan, but only around 3-4 years old. On your website there is only 2007 and 2011, so 9+ years. Whats an good alternative to buy? And what should I buy for a contrast tea?

      Our warehouse is fairly dry, so that tea ages relatively slowly. Just few days ago I tasted blind our Bai Mudan 2007 and did not guessed it was an aged white tea (shame on me!). I instantly realized it was a white tea, but the taste was quite... fresh. So, I would say, that the BMD 2011 is a good start, and also the shou mei 2017... to be compared with Yin Zhen 2017 from the same producer.
