Maybe Bella’s brain functioned so different because she was dropped on her head too often and this is the reason why Edward can’t read her mind. Her brain waves were just different from all head traumas.
Actually I think it’s supposed to be genetic or something. One thing that is revealed in Midnight Sun that was NEVER mentioned in the original series is that Bella’s Dad Charlie, also has some kind of mind shielding ability. Edward can still read his mind but it’s somewhat limited. Like he can only see images and can only get the gist of his thoughts from them.
