    It all began in the royal kitchen of Shahuji Maharaj, during the illustrious reign of the Thanjavur Maratha kingdom between the 17th and 19th centuries. In an effort to recreate the tangy Maharashtrian dish amti, Shahuji and his talented royal cook decided to put their culinary skills to the test. They cleverly substituted moong dal with arhar dal and replaced kokum with the tantalising flavours of tamarind.
    Their innovative adaptation of the dish proved to be a hit with Chhatrapati Sambhaji Maharaj, the esteemed guest and eldest son of Chhatrapati Shivaji Maharaj. he was so impressed with the delicious creation that Shahuji decided to honour him by naming the dish after him. And thus, sambar was born.
    Today, more than 50 varieties of Sambar are available all over India, but Thanjavur Brahmin sambar is still the King of Sambar. Several southern states have different varieties of Sambar. In Karnataka, it is prepared with wet paste that is slightly sweet, whereas in Tamil Nadu, it is prepared with dry powder. Kerala created their own variant of Sambar with roasted coconut grate.

    You are mistaken.The use of sambar powder is a comparatively recent tradition I am 83 years old and our family goes back to over a thousand years in TN. My grandmother used to manually grind the paste including The fresh coconut ; and jaggery the size of a small lemon to counter the sharpness of the tamarind. NO readymade powder until she passed away. Even then too no store bought powder.
