The first thing I liked about the introduction is to clearly mention it’s a restaurant style sambhar and not the original South Indian Sambhar. Well done Sanjyot on your home work on traditional cuisines.
Thereare multipleways of making sambhar , however this is one of the style - madras kind of sambhar, which i like the most.. in south India there are various territories and all carry different way of making sambhar. My mom is from hyderabad telangana, and my mother in law from Andhra pradesh Vijaywada, and my massi from coimbatore. This is coimbatore style.

Tried it today, turned out superb. If you follow the exact proportion and quantity asked by the chef, you will end up preparing the most accurate and tasty sambar. Chef, have one question, do we have to remove the seeds of the kashmiri mirchi before tossing up in the pan? Because the sambar I prepared today was extremely flavourful but was little bit on the spicier side. Please suggest.

Very nice recipe.. But isme hum bhopla, ash gard aur baingan nahi daltey q k humare me wo nahi khaya jata to hum dudhi(lauki) dalte hai.. Bahot atchi banti hai par apki recipe ekdum best aur unique hai. Thanku mujhe apki sari recipe atchi lagti hai..
