When is it prepared to be boiled? Can I boiler the pasta as soon as they go out of the machine or or need to rest? How long?

I make pasta for 12 years and if you only use durum flour and water and extrud any shape like lumache or rigatoni you have to let it dry in a walk-in for like 5 days or so because if you cook it right away it gets all gummy, or you can use a fan to dry it out quickly, if you make fresh extrusion using 00/durum and eggs like linguine or spaghetti yes you can cook it right away because it is considered fresh pasta, they are different recipes though, durum and water and eggs and 00 flour and durum
