I believe Blender used to do that before 3.0 or maybe even earlier than that. I remember missing this feature in the later versions

blender is a free open source program that still manages to compete with industry standards like maya and zbrush. i dont think it’s fair to expect more than we already get

Not only have I not seen Blender do that, you're also limited on how far you can undo....So if you get deep then completely change you're mind....best to save before hand.

You can change max undo's in your preferences, it's very memory intensive though of course.
