    Strawberry Crisp

    A Note about My Recipes -- there'll be times when I make a recipe on camera and then see little tiny adjustments to make the recipe even better, knowing it will be the best it can be. Enjoy!
    3 cups strawberries, rinsed and sliced or cut. Don’t make the pieces too small. I'd not recommend frozen strawberries as they get so watery once thawed.
    2 tablespoons granulated sugar
    ½ teaspoon vanilla
    ½ tablespoons corn starch
    1 teaspoon lemon juice
    Crisp Topping
    ½ cup AP flour
    ¼ cup butter, very cold and cut into small pieces
    1 tablespoons granulated sugar
    4 tablespoons brown sugar
    Pinch of salt
    ½ teaspoon cinnamon
    ½ cup old-fashioned rolled oats
    NOTE: This makes a lot of topping so you may only want to make a half-batch or not use all of it. Or you could add more strawberries.
    Preheat oven to 350 degrees F.
    Lightly butter a 1 ½ quart (or similar size) baking dish
    Combine berries, sugar, vanilla, and cornstarch. Stir gently to coat the berries. Place in baking dish
    In a medium sized bowl add the flour, butter, sugars, salt, and cinnamon. Crumble butter into flour mixture until it’s combined. It’s ok to still have bits of butter here and there. Add the oats and mix them into the flour and butter mixture.
    Pour the crisp topping over the strawberries.
    I’d place the bake dish on a cookie sheet (in case the crisp bubbles over).
    Bake for approximately 35-40 minutes until very golden brown and bubbly. Be sure to let it cool a bit as it will be EXTREMELY hot when it first comes out of the oven.

      @@Jill4Today ha! I wasn’t trying to give you a kick in the caboose. The challenge for cooking for 1-2 for me is not having to eat something over and over again, but I also am too frugal to accept wasting ingredients because I reduced the recipe to serve 1-2 and eventually throw out the 1/2 onion I didn’t use, or the half can of whatever, etc. Therefore, I’d also love to see you take a group of ingredients and use them all up making a week’s worth of meals for 1-2 from that group of ingredients. Just an idea.

    I love seeing baked strawberry recipes! A few months ago I made a strawberry/blueberry crisp that sang arias....not too sweet or sour. I ate it for breakfast for 4 days, topped with vanilla yogurt. Thanks so much, Jill, for sharing your recipe...J

    Since I would do that with blueberries, would you add the starch, vanilla and lemon with them too or is that just for if using strawberries?

      I would add the corn starch as blueberries give off juice as they cook. Lemon is so tasty with blueberries, so I'd add the lemon juice, even 2 teaspoons. With blueberries, you'll probably need to add a bit of sugar to them. You could leave out the vanilla. I hope that helps
